If you google spruce eats vegan vanilla pudding, you’ll find a very easy vanilla pudding recipe using cornstarch. I’ve used it many times to make layered banana pudding (southern style, like a trifle), and I think if you cook it a little longer and cool it to thicken further, it may work as a pastry cream.
