    I have made the pumpkin black bean enchiladas several times and it is a winner, particularly the sauce. Echilidas are my go to add the end of a week as I can use leftovers for filling and smother in the creamy and beautiful sauce. I also use the sauce on buddha bowls, tacos, quesadillas, omelettes and even added to soup for a creamy texture. Super versatile and tasty. Thanks!!

    We love the Cheesy Vegan Pizza Beans!
    My teenagers have requested it to be a weekly staple. Thank you for an easy and satisfying recipe. As I write this, we are enjoying leftovers. My daughter made a sub sandwich with it! Thank you for all of your amazing recipes.
