    Thanks for all these great recipes my husband and both went vegan this past year, but he’s a very picky eater, so maybe these will help him eat more vegetables.

    These all look divine, especially the kale salads!! This summer I made a potato, zucchini, and tomato gratin and it was amazing (too bad I didn’t record the recipe while I was making it!!). I do prepare these zucchini parmesan crisps…they’re the next best thing ;-)

    Yup, sides make the world go round. They add variety. My 4-year-old is obsessed with kumquats but I just read that it’s perfectly okay to eat them whole, skin and all? She will love this salad. Love attending gatherings where there are lots of sides to choose from, especially eye-popping colorful ones like the zucchini gratin!

      Yes! Thinly slicing them makes it easier to digest. But the whole fruit is edible!
