If you follow me on Snapchat (username: minimalistbaker) and Instagram, you probably already knew I had a sexy watermelon recipe coming your way. I share all of my secrets on social media, just in case you were wondering (wink, wink).

I’ve already divulged all the details of my watermelon obsession here, so there’s no need to sing my love for this ruby-red fruit all over again.

Instead, I have a super simple, summery recipe for you that’s perfect for when you want something sweet, healthy, and refreshing on sweltering-hot days.

I present the Watermelon Slushie.

This recipe requires just 3 ingredients and a blender! Frozen watermelon creates a slushie base, light coconut milk complements the flavor while adding creamy texture, and lime juice injects some acidity to balance the sweetness.

Coconut Lime Watermelon Slushie

Super simple, 3-ingredient watermelon slushie with coconut milk and lime juice. The perfect refreshing, naturally sweetened summer treat!

  • 1 small seedless watermelon (cubed)


  • 4 cups frozen watermelon (3/4-1 small seedless watermelon yields ~4 cups or 616 g)
  • 1 medium lime (juiced)
  • 1/3 cup light coconut milk
  • 1/2 cup watermelon juice (plus more to ease blending)
  • 1 Tbsp sweetener of choice (optional // such as maple syrup or honey if not vegan)
  • 1 pinch sea salt (optional)


  • Halve a ripe seedless watermelon and scoop out rounded Tablespoon amounts (or cube with a knife). Arrange on a parchment-lined baking sheet. Freeze until firm – about 3-4 hours.
  • In the meantime, halve another small seedless watermelon and add the fruit (leaving the rind behind) to a blender. Blend on high, adding a touch of water if needed (I didn’t), until completely smooth and pureed.
  • OPTIONAL: Drape a large, thin dish towel over a mixing bowl and pour over juice. Then gather corners, lift up and squeeze the juice out leaving the pulp behind – there shouldn’t be much, but this makes the juice extra smooth. Transfer to a mason jar, cover, and refrigerate – should keep for 3-4 days, or more.
  • Once watermelon is frozen, add ~ 4 cups (amount as original recipe is written // adjust if altering batch size) frozen watermelon (I found 4 cups was about three-quarters of one small watermelon), coconut milk, lime juice, and watermelon juice to a blender and blend on low until creamy and smooth. You will need to scrape down the sides and blend on low to encourage it along. If it has trouble blending, add a bit more watermelon juice, but not too much or it will become too thin.
  • Once the slushie is blended and smooth, taste and adjust flavor as needed. Add more coconut milk for creaminess, lime for brightness, a pinch of salt to enhance sweetness, or sweetener of choice to sweeten. Blend and sample again – repeat as needed.
  • Serve in empty watermelon rinds or chilled serving glasses and garnish with a lime wedge.
  • This recipe serves 2 generously. Best when fresh! TIP: Freeze leftovers in Popsicle molds.

    A few questions…
    Can you use regular canned coconut milk?
    Is straining the watermelon for the juice required?
    Any suggestions for the best alcohol to add for an adult version?? ;)

      Yes, you can use that kind of coconut milk. You don’t have to strain! I’d say coconut rum would be the best addition! That or you could try a spin on our watermelon margs.

    I had a craving for a boozy watermelon drink over the weekend and took to Google. I found your easy recipe, made it, and absolutely looooooved it! It was definitely a hit. I made a batch without booze and a batch with Dominican rum. I didn’t have time (or patience) to freeze the watermelon so I added ice to the blender, and also didn’t add watermelon juice, and that all worked out well! ALSO, I used a yellow watermelon, which was super cool. It was so good that a squirrel came by and drank the leftover slushie (posted pictures at of the squirrel — super cute!).

    Looks SO good! Quick question – is the coconut milk the kind from a can or the kind you find in the fridge section with regular milk?

      Hi Molly! Coconut milk from a carton you find in the refrigerated section works! Additionally, tetra-cartons will work too.

    Great recipe. I made them last weekend and they see thoroughly enjoyed!! I’d like to make them again but have a guest who is allergic to tree nuts (coconut). Any replacement suggestions?? I love your site! ?

        A few years late here but coconut is a fruit, so people with tree nut allergies aren’t allergic to coconut in general. Also, someone who has a tree nut allergy would be allergic to almonds so this is not a great suggestion in any case.

    I’m really glad there was a video because for whatever reason both my partner and myself could not figure out the written instructions. We were confused because it says “halve” the watermelons, but then mentions 3/4s, and so we weren’t sure how much to freeze or how much to blend for juice. But from the video it looks like a whole watermelon for each? and then you just have leftover pieces/juice?
