Beets — you either love them or you hate them. But we’ve crafted just the recipe to turn almost anyone into a beet lover.

And it couldn’t be simpler! Made with just 1 blender, 3 ingredients, and 5 minutes, this smoothie is bright, fruity, and detoxifying. Let me show you how it’s done!

Tray with coconut, mint, apple, strawberries, banana, and beet for making a healthy vegan smoothie recipe

Raw beets are a nutritional powerhouse known for their ability to aid detoxification. That’s reason enough to love them aside from their gorgeous magenta hue.

Combined with strawberries for sweetness, beets create a vibrant, pink smoothie packed with plant-based fiber, iron, folate, and vitamin C.

Banana adds potassium and plant-based creaminess, and apple juice brings everything together while adding a subtle sweetness and even more vitamin C. Serious yum.

  1. Wendy says

Incredibly refreshing and naturally sweet–this recipe turned me from a skeptic into a beet fan! I subbed pom juice for the apple. I am still surprised at how much I enjoy this smoothie. Highly recommended.

  2. Trudy says

When I made this I also added a vanilla boost drink and extra fruit as I like my smoothie thick. It was very good. I will be keeping this recipe.

Hi Irene, as with many of our recipes, there are optional ingredients that you don’t have to include for the recipe to be delicious. This recipe is 3 ingredients without the optional banana and mint/coconut. Hope this helps!

  3. Sarah says

YUM!! I didn’t have apple juice, and didn’t have time to make it, so I added half an apple and water. I also gave it a squeeze of fresh lemon juice. Very good!

  4. Kristen says

Yum! Love this smoothie. I made as directed with the mint and coconut on top—great combo! I made it in my basic mini food processor without an issue. Thanks for a great recipe!

    • Jaclyn says

I had beets I needed to use up but was so hesitant about making this smoothie because I didn’t have apple juice or any juice for that matter. But I ended up using oat milk and it was fantastic!!! I added blueberries since I had them too. I’ve made so many of your recipes and am always so impressed with how delicious they taste! Thank you

Wonderful! Thank you for the lovely review and sharing your modifications, Jaclyn! xoxo

  5. Sarah says

I tried making this smoothie this morning. I found the dirt taste of the beet very strong making the recipe as written. I ended up adding more bananas and strawberries, and adding pineapple until it covered up the dirt taste enough that it was palatable. In the future I will keep the beet ratio very low and the fruits much higher!

  6. jon says

Ya know, I usually go with whats in the fridge, still fresh but unless I eat it soon I’ll be throwing it away.
Today I blended 1 celery rib, about a 2 inch end of cucumber, 1/2 honey crisp apple, 1/2 a medium size raw beet (peeled and diced), some frozen blueberries, 1/2 a Roma tomato, 6-7 sprigs of parsley, 3 ice cubes about 1/4 cup water, pureed and then poured into a large jar, then added about 1 cup of almond milk into blender to remove the balance of the puree, shake together and deeeeelicious!
Was hoping to drink the second half later but it’s really good!

BTW i used vanilla almond milk and didn’t core or peel anything except the beet, just diced everything to make the blending easier.

  7. Ella says

Good Morning I just made this smoothie it was delicious didn’t have any apple juice I used coconut water instead, can’t wait to try it with the apple juice next time. Thanks for the recipe

  8. Jennifer P. says

Excellent! I am doing a “gentle detox” for my liver this week, and needed a way to use beets that was both clean, wholesome, and tasty. This smoothie was it! The beets, apple, strawberry, banana are just the right combo. I threw in a little knob of ginger (for an added immunity boost) and an extra date for added sweetness. My toddlers were drawn to the color so I shared some and they loved it. Guess we are all detoxing this week lol I love all of minimalist bakers recipes.

  9. Justin says

We made this with a raw beet, frozen mixed berries, a handful of frozen spinach, and cranberry-grape juice. I know that’s different enough that it’s barely your recipe anymore, but this was the only recipe we found that was simple and sounded delicious. Wonderful, thanks!

  10. Michele C Bennett says

I actually made my smoothie with 2 small beets, spinach leaves, cinnamon, flax seeds, 1% milk, apple juice, an apple, a banana, and some frozen unsweetened tropical fruit.
It was great. Not sure about the health benefits, could you please assist me with that?

  11. Marie says

I was looking for ways to use my leftover beetroot and this smoothie recipe was perfect. I made a few tweaks so I could use what I had on hand and it was still tasty! I replaced the apple juice with cranberry juice and use mixed frozen berries as opposed to frozen strawberries. I can’t get over how good the colouring looks too!

  12. Tee says

This was amazing. It taste so good and I like the easiness. My niece hated beets because of how they looked. I made this smoothie and told her it was a strawberry smoothie…. lol I know horrible… she drank every bit. When I told her the ingredients she couldn’t believe it… now she makes this three times a week. Great recipe!!!

Oh.my.goodness. This is fabulous and so easy to whip up in my Thermomix, where I can grate the beets then add the rest of the ingredients. Very delicious with just the slightest hint of beet taste, mostly strawberry and banana. And I can totally see this as a frozen treat. Thank you!

Tried this with applesauce + water instead of apple juice because that’s what I had and it was excellent! Put the mint right in the blender and it came out really refreshing. Going to have it again tomorrow!

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

We haven’t tried it, but maybe? You would need to reduce the amount of total liquid though otherwise it will be runny.

  15. Juliana says

I modified a bit the recipe for 2: 1 small beet (double the recipe), frozen strawberries, double frozen bananas, coconut milk and cherry/apple juice. Was delicious and my boyfriend said is his favorite smoothie so far! Thank you :))

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

We haven’t tried that, but we think it would work! Might be a little different flavor profile. Let us know how it goes!

  16. Navely says

Loved this as a morning smoothie. I added a cup of spinach to add some greens to it. Husband loves it as well. Thanks for the recipe.

  17. Amanda says

Recipe looks amazing! If you’re not a banana fan, what’s a good substitute? I see banana as a base in a lot of recipes including this one so I thought I would ask.

That hit the spot after a walk in the sunshine.
I only had frozen beets and frozen mixed berries but it was a lovely combo. I had to use twice as much apple juice to get it to blend due to frozen beets maybe??
Topped it with the shredded coconut just for fun.
    Thanks for the recipe!

  19. Anne E says

Thank you so much for this idea!! I’ve been wanting to use beets more, and this was the inspiring kick I needed!! I’m not one to measure – and the fastest way is the best for me, so here’s what I did:

    – 1 beet
    – 1 apple
    – 1 mason jar frozen strawberries
    – 1 mason jar unsweetened oat milk (still a bit sweet!)

Filled 2 mason jars perfectly! The oat milk def added a distinct flavour and sweetness, which was great. It was fairly liquidy – use less if you’d prefer a thicker smoothie.

  20. Merel says

I made this last week, with rice milk instead of apple juice to keep my sugar intake somewhat lower. It was so incredibly good, I’m graving it again! I think I’l blend some fresh mint into it today. Thanks for the recipe, Dana!

  21. Heather says

My 5 yo called this “beet-licious”! He and I have been known to put down some beets, but when it’s a 1000 degrees who wants to cook down beets for an hour? This is such refreshing way to enjoy beets! I cut the juice a little and ended up adding more water, mostly to make it easier for him to drink. Thank you for another great recipe!

  22. Amber says

I’m not very fond of beets but this is delicious! I don’t have the cookbook so i used organic apple juice. I plan to have this every day. Thank you for the great recipe!

  23. chris walker says

Great smoothie and a way to get my husband to eat veggies. Sweet and refreshing, you can taste the beets but it is very mild. Love the color as well. I will definitely make this again. I did add the frozen 1/4 banana. I also added about 1/4-1/2 cup of water as my blender/shake maker needed the extra liquid.

  24. Angela says

This is was so simple and delicious! I sometimes over complicate smoothies :D I forgot apples, so I substituted coconut water and it was delicious! It felt light enough to have as a snack rather than breakfast for me! Thank you~

  25. Anna Viehbeck says

    Made it with some tweaks:
    – used more beets (one whole);
    – applesauce instead of apple juice;
    – threw in a handful of baby spinach;
    – a few frozen grapes and couple of peach slices along with strawberries.
Result: YUM! and the colour is mesmerizing :))

  26. Brittany Mullins says

Ohh!! This looks so awesome, Dana. I love beets — perfect way to see how fast your digestive system is working. hehe

  27. Joyce says

This smoothie is WONDERFUL. I just got back from a workout and decided to give it a try. Fast, easy and DELICIOUSLY ? nutritious. I drank the whole thing, no splitting it in two in me! and no leftovers — Piggy ? me ?

  28. jorunn says

It says 3 ingredients but there are four listed, is the apple juice not included in the list of ingredients?

  29. Patsy says

Reviewing – DELICIOUS and sweet and really satisfying.
Reporting back – see my question below: I had no strawberries, so used some frozen blueberries instead plus some frozen green bananas (I always use unripe) as my fresh fruit. And I DID try 1 scoop of my vegan protein powder (NuZest Clean Lean Vanilla) and I took your suggestion to skip the apple juice in that case, subbing unsweetened almond-cashew milk. It was wonderful!
NOTE: adding several mint leaves to the blender with everything gave it an extra POP of sweetness! I add mint (or fresh ginger) to most of my smoothies.

Hi Dipti, we haven’t tried it in this recipe, but it can have a strong flavor. We’d say start with 1/4 tsp and increase, to taste. Let us know how it goes!

  30. Tiffany says

Oh I’m going to make these into a popsicle! Sounds great for these hot, humid South Carolina days! Thanks ?

  31. Ada McVean says

Dude I love your recipes but please don’t fall for pseudoscience in an effort to make them pop more. There is no such thing as a detox, to claim there is is just dangerous and misinformed.

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Hey, thanks for the feedback. The reason we used that term is beets contain phytonutrients called betalains that increase enzymes that aid the liver in detoxifying the body. Yes, our bodies detox naturally, but when given the right foods it can do its job more efficiently.

  32. Megan says

About how much is a serving size for this? Closer to 1 cup or 2 cups each?
I can’t wait to try! Looks so delicious!

  33. Tracey Cowart says

This smoothie is delicious and filling. I make it for breakfast and drink it on the way to work. Sometimes I add other fruit like pineapple and blueberries. A full five plus rating!!!

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Hmm, you could swap the apple juice for dairy-free milk or water? And skip the banana.

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Hmm, I wouldn’t recommend that for freshness and flavor. But if you give it a try let us know how it goes.

  34. Patsy says

I need something like this as a light detox lunch so I’m thinking I’ll add a scoop of my vegan protein powder. (NuZest Clean Lean Protein Powder). Thoughts? Any suggestions as to how to make this optimally tasty with the right texture and feel?

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

I think with a little protein powder it would be great! You may want to skip the apple juice and just do water or nut milk in that case so you can control the sweetness. Let us know how it goes!
