How to Make Protein Waffles

Grab these 5 INGREDIENTS, and you’re ready to make protein waffles:

  1. Pancake + Waffle Mix: Our wholesome vegan and gluten-free mix makes super fluffy pancakes and crispy waffles every time!
  2. Protein Powder: We like Sprout Living Vanilla or Original, or use another protein powder of choice. We recommend one with pea + brown rice protein for best flavor!
  3. Dairy-Free Milk
  4. Vanilla Extract
  5. Avocado Oil or Melted Vegan Butter
Adding protein powder to the wet ingredients

When ready to make waffles, simply whisk together the wet ingredients, then add in the dry, and you’ve got a protein-filled WAFFLE BATTER!

Then cook ’em up in your waffle iron until crispy and golden brown! All that’s left is choosing your toppings and digging in! We love nut butter, fresh fruit (or compote), and maple syrup.

Instructions

  • To a medium mixing bowl, add the dairy-free milk, vanilla extract, and oil or melted vegan butter. Whisk well to combine.
  • Next add the Minimalist Baker Pancake + Waffle Mix (see notes for DIY version!) and protein powder of choice. Whisk again until there are no lumps remaining.
  • Preheat your waffle iron and cook the waffles according to the manufacturer’s instructions.
  • Serve warm with desired toppings, such as vegan butter, maple syrup, peanut butter, or fruit. We like a combination of bananas, maple syrup, and peanut butter!
  • Store leftovers in the refrigerator for up to 3-4 days or in the freezer for up to 1 month. Waffles reheat well under a low-medium broil or in the toaster until hot and crispy.

*DIY Pancake + Waffle Mix – add the following ingredients to a medium mixing bowl: 1/3 cup (53 g) brown rice flour, 1/3 cup (37 g) almond flour, 1/3 cup (30 g) oat flour, 2 Tbsp (20 g) potato starch, 2 Tbsp (24 g) coconut sugar, 2 tsp flaxseed meal, 1 ½ tsp baking powder, 1/4 tsp sea salt. Whisk until no lumps remain, then proceed with the recipe. The pancake + waffle mix can be prepared ahead and stored in a sealed container at room temperature for 1 month or in the refrigerator or freezer for 3 months.

    What waffle maker do you use? I’m having a hard time finding one that’s not coated in Teflon or other terrible chemicals….

      Hi Lyndsy, our preferred waffle makers are linked in our shop page, however, they do have non-stick coatings, so unfortunately not what you’re looking for! You could try a cast iron waffle pan, but they are more finicky with sticking.

    Hi! My daughter has a lot of food intolerances and unfortunately PEA is one of them. Instead of protein powder, could I sub powdered collagen peptides?

      Hi Kristyna, we think collagen could work, but it might not be as absorbent. If the batter seems too wet or if the waffles aren’t cooking in the middle, try adding more of the flours. Hope that helps!

    These turned out so delicious! I did the diy mix in the notes and added the KOS Vanilla protein powder.
    ate half a waffle and Topped with peanut butter and berries. It was still super filling and so yummy.

    I am absolutely in love with this recipe, especially using your Pancake and Waffle mix. The only problem is that you are out of the mix and I just used up the last of the mix I had! Do you know when it will be back and available to purchase? Brilliant idea to add the protein powder which elevates these nutritionally.

    Although I haven’t made these yet, I can appreciate how much work goes into testing and creating new recipes. It’s cool to see you trying to find multiple uses for your products but still providing alternatives. I guess I just wanted to say I’m rooting for MB as a small business and understand the struggle of balancing marketing and content creation. Even if I don’t get a chance to purchase your mixes, MB remains one of my favorite positive places to get inspired. Just hoping for the whole team’s happiness and success!

    This is an excellent waffle recipe. I’ve been testing and searching for years for waffles that were gluten free, sugar free, and vegan! I do prefer 2 Tbsp of vanilla protein as it was too much vanilla for me, but great recipe overall. Thank you so much for sharing.

    It would be nice if you included in the DIY section a way to make these without using your premade mix. Some of us don’t have access to buying the premade mix, and that makes this recipe irrelevant because we cannot even try to make it.

      Hi Emily, In the recipe notes, there are links to two different recipes for DIY options. You can use 1 1/4 cups of the dry mix from those recipes in this recipe. Hope that helps!

    I followed the ingredients and directions exactly and my batter was very thin, Should I have adjusted that so it was thicker? I put it in the waffle iron anyway for the recommended time and it did not turn out. In fact my waffle iron is a mess, Half the waffle was on top and half on the bottom some of the waffle was not cooked in the middle, even though I sprayed it with oil. Where did I go wrong? :(

      Hi Monica, we’re so sorry it didn’t turn out well for you! Would you mind sharing which protein powder you used? Is it possible the non-stick coating on your waffle iron is worn out? Were you using the US or metric measurements? What type/brand of dairy-free milk were you using? Did you by chance open the lid to check on the waffle before it was fully cooked?

    I am sad. I can’t make your delicious waffles, or any of your other enticing gluten-free recipes that you so generously send to my inbox. Why? Because, as you mention on your FAQ, “We only ship within the United States at this time”, and I don’t have a recipe for GF flour that would come close to giving the same results. 😢 So now I read receive your enticing emails, read the recipes, and all I can do is salivate. 🤤 Any idea when (or if) you will ship to Montreal, Quebec (Canada)?
