This version is as simple as it gets: 5 ingredients5 minutes prep time, no fancy methods, and simple ingredients. Let’s do this!

 

What Are Overnight Oats?

Overnight oats are a quick and easy breakfast or snack made by soaking rolled oats in liquid overnight.

We love how overnight oats seem to keep the integrity of the oat intact, helping to avoid that gummy texture that cooked versions sometimes take on. 

They’re simple to prepare (no cooking required!) and perfect for when you need a make-ahead breakfast or snack, especially for those with hectic mornings.

How to Make Overnight Oats

After a little testing, I’m happy to report that our simple, straight-forward method truly yields the best results! I even tried partially cooking the oats with warm almond milk before refrigerating, but much preferred this completely raw version.

We use the following base formula for making perfect overnight oats:

1/2 cup Dairy-Free Milk + 3/4 Tbsp Chia Seeds + 1/2 cup Rolled Oats = Perfect Overnight Oats

You can play with formula as needed, adding more dairy-free milk for wetter oats, or adding more chia seeds (or oats) for thicker, more pudding like oats.

To make your overnight oats, simply add these ingredients to a small jar or bowl with your preferred sweetener (we love maple syrup or stevia!). We also added peanut butter to this version for a flavor and protein boost!

Give the mixture a few stirs to make sure the oats have been fully immersed in the milk. Then, cover and leave in the refrigerator overnight to let the oats soften and flavors meld.

Overnight oats FAQs

How long do overnight oats last?
Overnight oats can be prepared up to 2-3 days in advance, sometimes longer. 

Can you eat overnight oats hot?
Overnight oats can be eaten hot or cold. To heat, microwave for ~45-60 seconds (just ensure there’s enough space at the top of your jar to prevent overflowing), or transfer to a saucepan and heat over medium heat until warmed through. 

Can you use quick oats?
We prefer using rolled oats to make overnight oats, but you can use quick oats – they will just be softer.

Can you use steel cut oats?
Though we haven’t tried it, some people report success using steel cut oats to make overnight oats. They will take longer, require more liquid, and probably won’t be quite as soft. They may also be more difficult to digest.

Are oats gluten-free?
This is somewhat controversial as some believe even certified gluten-free oats to be troublesome for those with gluten sensitivities and celiac disease. But based on our own research and experience, it seems certified gluten-free oats make this recipe gluten-free.

Peanut Butter Overnight Oats (5 Ingredients!)

Ingredients

OATS

  • 1/2 cup unsweetened plain almond milk (or sub other dairy-free milks, such as coconut, soy, or hemp!)
  • 3/4 Tbsp chia seeds
  • 2 Tbsp natural salted peanut butter or almond butter (creamy or crunchy // or sub other nut or seed butter)
  • 1 Tbsp maple syrup (or sub coconut sugar, organic brown sugar, or stevia to taste)
  • 1/2 cup gluten-free rolled oats (rolled oats are best, vs. steel cut or quick cooking)

TOPPINGS optional

  • Sliced banana, strawberries, or raspberries
  • Flaxseed meal or additional chia seeds
  • Granola

Instructions

  • To a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup (or other sweetener) and stir with a spoon to combine. The peanut butter doesn’t need to be completely mixed with the almond milk (doing so leaves swirls of peanut butter to enjoy the next day).
  • Add oats and stir a few more times. Then press down with a spoon to ensure all oats have been moistened and are immersed in almond milk.
  • Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
  • The next day, open and enjoy as is or garnish with desired toppings (see options above). See more flavor/topping suggestions in the blog post above!
    OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds (just ensure there’s enough room at the top of your jar to allow for expansion and prevent overflow), or transfer oats to a saucepan and heat over medium heat until warmed through. Add more liquid as needed if oats get too thick/dry.
  • Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.

    Oh. Em. Geeeeeee! After trying repeatedly (and unsuccessfully) for an easy, make-ahead breakfast with chia seed pudding – I decided to try overnight oats, and used this recipe. SO DELICIOUS! I prepped it last night and just polished off my serving, wishing there was more.

    Not being a huge breakfast fan, I can’t say thank you enough for something yummy, vegan, easy, and healthier than SAD options.

    I’ve just washed my mason jar and making another ready to go for tomorrow. ?

    Not to seem stupid, but I’m from Texas where we typically eat our oatmeal HOT. Are these to be heated or eaten cold from the refrigerator?

      You can eat them straight from the refrigerator. But if you prefer, you can heat them on the stovetop or in the microwave once they’ve soaked overnight!

    This is the first overnight oats recipe I’ve ever done, and there’s no need for me to ever try another! My whole family lives it. Personally, the chia seed level makes it too thick and sometimes gummy for me, so I use Trader Joe’s Ancient Grain mix instead, which includes some chia seeds plus lots of other goodness.

    Hi – Any experience with prepping about 18 hours in-advance? Does it lose it’s integrity/textures? Also, I’ve never seen any info on this, but I’m seeing chia seeds pass straight thru without digesting. Have you heard if they need to be ground, like flax seeds? Thank you!

      I’ve eaten this 18 hours later and it’s still enjoyable. I sub in Trader Joe’s Ancient Grain mix for the chia seeds to reduce gumminess.

    These are fabulous! The only thing I would add would be flax hull lignans (a powder of extracted lignans from the flax seed shell that show in trials to increase your CD4 counts – the measurement of your immune system). I add it to all my breakfast type foods. They also convert to omega 3’s in your gut. That, added with the nutrition of the chia and I feel like I’m eating super power food in the morning!!!! The peanut butter is a decadent addition to taste here too! Thanks for this recipe!

    I’ve never tried overnight oats before, but I had all of the ingredients (save for the peanut butter) at home and your recipes are always wonderful, so I gave it a shot. However, at around midnight, I couldn’t fall asleep and went to the kitchen to make homemade peanut butter from a packet of unsalted peanuts using your nut butter recipe, and added a tablespoon to the jar already in the fridge. Boy oh boy was it worth it! As much as I adore your cinnamon buns, this has become my new favorite breakfast recipe <3

    You have saved my breakfast! Currently studying abroad in Shanghai, China and have been struggling to stay vegan over here since they cook a lot of vegetables in animal fat :( or use meat to flavor vegetable dishes. Definitely skeptical about buying street food, and food from the stores since at times I literally have no idea what’s in the product. Finally managed to convince my stay at home mom to let me make my own food, so I searched the local foreign food market and was able to find all these ingredient (minus Chia Seeds) and make this one morning.     A great recipe to make mornings easier!
    Just wanted to share that BananaWave , the newest plant milk (like almond or rice milk but made with bananas instead) also works here, and also allows you to skip the added sweeteners (to the commentor who was worried about sweetening/calories) as it is pretty sweet by itself. Soaking the oats in it seems to intensify the banana flavor too. Banana+PB is always delicious.

    This recipe was perfect!! I made a few changes based on what i hand on hand and since I am watching my sugar intake.     I just made these overnight oats last night (my first time doing overnight oats at all) and I was skeptical, because of the few ingredients and small ish looking mason jar I had, and I must say I was pleasantly suprised this morning when I ate them, and it filled me up AND it was delicious! I used agave maple blend syrup and regular old skippy chunky peanut butter (that is what I had on hand :/) and it was great! Will make again, especially for my husband who is always rushing to get out in the morning before work, and eats oatmeal and blueberries every day. Thank you! It definitley makes oatmeal not quite as boring. Will try other recipes too.

    Thanks for the recipe but does it really contain almost 15g of sugar?? That’s more than half the daily recommended intake of 25g. Where is all the sugar coming from?

      Hi Romina! The maple syrup and peanut butter both have sugars. If you are worried about your sugar intake, you could leave out the syrup.

      Yes it can be heated up! Every microwave is different so heat until warm (45 seconds or so)

    This was my first foray into the world of “overnight oats.” Im not a hot cereal fan, but desperately needed a nutritious, fast breakfast. I was super pleased with the results, although I did add a tiny bit more almond milk after about 4 hours because the mixture looked a little dry despite having pushed the oats into the milk mixture like the recipe states.
    I will definitely be making this again though!

    I have experimented A LOT with overnight oats. I’ve tried all kinds of crazy recipes with random ingredients; pureeing fruit to make smoothies to mix in with the oats, adding all kinds of expensive nuts and things, and honestly not one of them has been as good as this one! Proof that simple sometimes really is best. I make this recipe all the time and I love to top with strawberries and ground flaxseed. SO delicious!!!     This was so awesome! I had never tried overnight oats before and so I was kind of worried about how it would taste. I would 10/10 recommend to anyone, super easy to literally just throw everything into a mason jar, pop in the fridge and bam! Instant to-go breakfast the next morning.     This was a great recipe. The oats looked a little dry in the morning but tasted great. I like the addition of Chia, gives it a good texture. My only mod would likely be to cut the amount of PB in half, I think it was a bit much for 1 person in the AM. Maybe use a scant 1/2 cup instead of a full 1/2 cup of oats as well.

    Other than that, perfect!

    This might actually be my favourite homemade breakfast ever! I make it every Friday night to eat after my long run the next morning. It’s delicious and completely filling.     Made for the first time and am writing this as I glance at my empty bowl. This was very tasty and satisfying. I followed the recipe with the exception of using walnut milk. Topped the bowl with berries, coconut, a little granola and a dash of cinnamon. Thanks for the recipe, will make again.

    Omg these are life-changing! I tried overnight oats once and just didn’t like them. Maybe it was the flavor? But the peanut butter really makes these things amazing! I warmed mine up and it was like eating warm and gooey peanut butter goodness.

      Hi! Quite often, focusing on calories often means we restrict healthy foods! This especially happens when it comes to fat. We often omit higher fat foods simply because they are higher in calories without taking into consideration what benefits we might get from them, such as staying fuller for longer (hangry much?) and getting necessary nutrients, like fat-soluble vitamins. These Overnight Oats are Protein-PACKED & also have a ton of fiber, two things which are super good for you! So I urge you to not get too caught up in the calorie count! Happy cooking!

    Not sure if you’ll see this comment, but I’m going to try this recipe soon! I’ve tried overnight oats in the past, and the recipe just never seems quite right when I try to make it (I’m a perfectionist, so I get mad if my results don’t look exactly like the recipe photo/result, haha). Your recipe sounds AWESOME, especially since you use actual peanut butter (so sick of the peanut flour trend) and wholesome ingredients, as always. I will be sure to use (gluten free) rolled oats, not the quick cooking kind – that’s the right way to go, correct? Thank you, Dana!

    This was delicious! The calories were a little high for what I was looking for so I used 2 tbsp of PB2 (powdered “peanut butter”) mixed with 1 tbsp of water in place of peanut butter (I know, I know). I also used maple syrup instead of coconut sugar (per blogger’s first suggestion). I can’t wait to make more!

          Hi Stacy, we reused old jars, so we aren’t sure of the size! This recipe makes 1 serving, but you can split into 2, if preferred.

    I needed a new mid-morning snack for work and so I gave this a try! I like it so much that I’ve made it every day this week!! YUM!
    I reduced the PB to 1 Tbsp and the maple syrup to only 1 tsp since its just a pre-workout snack for me. Then I added a dollop of Blackberry Jam on top!! Definitely a great recipe!

    I really enjoy this recipe. It tastes great and is so filling. If I forgot to make it the night before or just want a quick, last-minute breakfast, I will put all the ingredients in the blender, add the banana and some ice and drink it as a smoothie.

    Love love LOVE overnight oats!

    My one tip for making this: After combining the milk, PB, and maple syrup, microwave them in a container for increments of 10-30 seconds until the PB is melted. It helps the PB mix in with everything else.

    This was an excellent breakfast/snack. I found that the end result is a bit too rich for me, but with some fruit topping (looking at you strawberries) it is the perfect balance. It is quite nice for a post workout snack and if you worked really hard just add some protein powder. Of the various recipes I’ve tried from this website this is so far my favourite, and it is a bonus that it can’t be easier.

    Fabulous!!! I used coconut milk instead. Also, I accidentally bought steel cut oats because I couldn’t remember which kind the recipe called for. Another reviewer suggested using less oats if you use steel cut- after making it according to the recipe, I do think probably using less would work better, like maybe 1/4 cup or so. Mine came out super thick, and I enjoyed them, but a little more liquid I think would be better.

    I made this last night and am eating this morning in front of my computer at work. I used Cashew butter instead of peanut butter and coconut milk because I didn’t have any almond. This is yummy and filling! I usually have hot oatmeal but was surprised that the cold oatmeal is good too. I think this would be perfect for an on-the-go meal if you have to get off to work and hop on a train or if you were traveling. delish!

    Made overnight oats once before and they were kinda awful (my greek yogurt did not jive well with the oats).

    However, this recipe is fantastic! I’ve eaten this for breakfast almost everyday for the past 2 months, without getting tired of it. I use brown sugar as the sweetener, regular whole milk, halved the PB, and don’t add any additional toppings. Still super delicious and the chia seeds really make the texture even better.

    I used these recipe as the base for the over night oats i made last night- I sub’d coconut milk, no maple syrup, and half the peanut butter. Then this morning i topped with a few coco nibs and shredded unsweetened coconut. Definitely worth a try if you enjoy something with a little chocolate and coconut!
