This version is as simple as it gets: 5 ingredients, 5 minutes prep time, no fancy methods, and simple ingredients. Let’s do this!
What Are Overnight Oats?
Overnight oats are a quick and easy breakfast or snack made by soaking rolled oats in liquid overnight.
We love how overnight oats seem to keep the integrity of the oat intact, helping to avoid that gummy texture that cooked versions sometimes take on.
They’re simple to prepare (no cooking required!) and perfect for when you need a make-ahead breakfast or snack, especially for those with hectic mornings.

How to Make Overnight Oats
After a little testing, I’m happy to report that our simple, straight-forward method truly yields the best results! I even tried partially cooking the oats with warm almond milk before refrigerating, but much preferred this completely raw version.
We use the following base formula for making perfect overnight oats:
1/2 cup Dairy-Free Milk + 3/4 Tbsp Chia Seeds + 1/2 cup Rolled Oats = Perfect Overnight Oats
You can play with formula as needed, adding more dairy-free milk for wetter oats, or adding more chia seeds (or oats) for thicker, more pudding like oats.
To make your overnight oats, simply add these ingredients to a small jar or bowl with your preferred sweetener (we love maple syrup or stevia!). We also added peanut butter to this version for a flavor and protein boost!
Give the mixture a few stirs to make sure the oats have been fully immersed in the milk. Then, cover and leave in the refrigerator overnight to let the oats soften and flavors meld.
Overnight oats FAQs
How long do overnight oats last?
Overnight oats can be prepared up to 2-3 days in advance, sometimes longer.
Can you eat overnight oats hot?
Overnight oats can be eaten hot or cold. To heat, microwave for ~45-60 seconds (just ensure there’s enough space at the top of your jar to prevent overflowing), or transfer to a saucepan and heat over medium heat until warmed through.
Can you use quick oats?
We prefer using rolled oats to make overnight oats, but you can use quick oats – they will just be softer.
Can you use steel cut oats?
Though we haven’t tried it, some people report success using steel cut oats to make overnight oats. They will take longer, require more liquid, and probably won’t be quite as soft. They may also be more difficult to digest.
Are oats gluten-free?
This is somewhat controversial as some believe even certified gluten-free oats to be troublesome for those with gluten sensitivities and celiac disease. But based on our own research and experience, it seems certified gluten-free oats make this recipe gluten-free.

Peanut Butter Overnight Oats (5 Ingredients!)
Ingredients
OATS
- 1/2 cup unsweetened plain almond milk (or sub other dairy-free milks, such as coconut, soy, or hemp!)
- 3/4 Tbsp chia seeds
- 2 Tbsp natural salted peanut butter or almond butter (creamy or crunchy // or sub other nut or seed butter)
- 1 Tbsp maple syrup (or sub coconut sugar, organic brown sugar, or stevia to taste)
- 1/2 cup gluten-free rolled oats (rolled oats are best, vs. steel cut or quick cooking)
TOPPINGS optional
- Sliced banana, strawberries, or raspberries
- Flaxseed meal or additional chia seeds
- Granola
Instructions
- To a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup (or other sweetener) and stir with a spoon to combine. The peanut butter doesn’t need to be completely mixed with the almond milk (doing so leaves swirls of peanut butter to enjoy the next day).
- Add oats and stir a few more times. Then press down with a spoon to ensure all oats have been moistened and are immersed in almond milk.
- Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
- The next day, open and enjoy as is or garnish with desired toppings (see options above). See more flavor/topping suggestions in the blog post above!OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds (just ensure there’s enough room at the top of your jar to allow for expansion and prevent overflow), or transfer oats to a saucepan and heat over medium heat until warmed through. Add more liquid as needed if oats get too thick/dry.
- Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.

This was absolutely delicious! My 5 year old loves oatmeal. I wanted a better alternative than the instant oatmeal I had been preparing. He loves Chia seeds as well. He calls them his “Super Hero Cheetah” seeds. I topped the oatmeal off with some homemade granola. I purchased some cacao nibs today to use with the granola for tomorrow’s breakfast.

I wasn’t sure what to do about the almond milk and the chia seeds because we can’t get those things here on the ranch in the small town in Mexico that I live in. So, I wrote to Dana and she said use any milk you can get your hands on and just omit the chia seeds or use flax seeds instead. So, I used fresh cows milk from the mornings milking and just omitted the chia seeds, and this was ABSOLUTELY FANTASTIC! I had tried overnight oats once before about 15 years ago and it was nothing but sugar and milk and oats and very thin and just disgusting. This was nothing like that was. This was thick, and rich and creamy and full of flavor and the peanut butter was the perfect addition to the whole thing! I made 2 double serving glasses and my husband and I were both scraping our glasses down to the last drop of oats and creamy peanut butter! We will definately have this at least once a week or more at our house! Can’t wait to try it again and with other fruit combos, like chopped apples, mangos, papayas orr chopped dates and maybe add some chopped walnuts or pecans…the combinations could be endless!! Thanks so much Dana, we needed a deliciously satisfying and simple breakfast that was cold, to lighten up our wake up to the hot hot Mexican sun mornings.

I am a new mom and can’t tell you how actually helpful and wonderful this recipe is. I now make 2 jars every 2 nights and it has made a big difference. Eating something that can sustain me for a few hours at least has become so important. I’m with you Dana – I rarely do overnight oats but for a while there I was doing them all the time. How lovely to have a sister! I’m an only child and after lots of pregnancy issues, it looks like mine will be an only too. This recipe reminds me of one I did while I was camping over the July 4th holiday. Instead of soaking the rolled oats I added chia, almond butter and almond milk in the morning right into the rolled oats and made a cereal. It was delicious! Thanks for reminding me of that recipe. Confession. Yes, that’s true. Only the other day I tried chia seeds. They’ve been everywhere. Everytime I opened my computer- they were there. Magazines- there. Shop- there. Ahh, absolutely can’t wait to try this. I’m heading back to college in the fall, I’ll be a sophomore, and easy, on-the-go breakfasts like these are perfect. I wonder if a bit of fresh raspberry jam swirled in would be yummy… I’ll have to do some research :)

Ohhh, these oats look delicious, Dana! I’m a huge oatmeal fan, and will be adding this to my list of breakfasts to try, like, ASAP.
And I have two younger brothers… neither of whom would eat oatmeal in a billion, trillion years. ;)

Dana- oopsy!!! I was making my own concoction & ran across your recipe trying to figure out the almond milk to oats ratio but used steel cut oats will it work???

Hello! I tried steel cut since that’s what I had on hand (and they are healthier), but it definitely kept the integrity of the oat. I read that the rolled oats did too, but the steel cut didn’t really soften, and since they are smaller, I think there was more “oats”, so I’d try a little more milk. Mine was still delicious with the same ratio. I topped with a banana to make it a little softer. :)

How long will these stay fresh? I’m double lazy (don’t like mornings and don’t like night-before prep work) so can I make a lot and have it throughout the week?

I think they’d keep for up to three days, then the texture and flavor would start to diminish. Hope that helps!

Actually, I suggest prepping all your mason jars for the week with differing variations. make the first 2 with liquids and leave the others sitting out without liquids as a reminder to add liquids the night before. then you can always just add hot water instead if you realize you forgot the night before or add liquids and eat for dinner.
option 2: put nuts and dried fruits on bottom, add liquid, and put oats on top for all week mason jars. turn over the jar you want to each the next day each night. will Not be too soggy then. best to use hard or containers that are taller and thinner for this option.

Oh my goodness. Yes. This is my life right now. Except that every morning I find I’m craving an epic bowl of overnight oats only to realize that I never prepared them the night before. So warm oats it is. I need a flashing neon sign above my bed to remind me to make this before I drift off! This looks so darn delicious!

If you want to go totally all natural I typically sweeten mine with date paste or 2 finely chopped dates (if you’re to lazy for date paste like me). If you just give it a good vigorous stir in the morning your all good to go. Peanut butter overnight oats is love<3

I have kids the same age as your sister and when they sleep till 7 a.m., I feel like a million bucks. Like I hit the jackpot. They get up….for the day at….between 5:30 and 6 a.m. And they expect me to be alert and perky at 5:30 a.m. and hurry up and get dressed and make breakfast. This is an awesome option for moms at home or moms on the go who have to leave early. Thanks! And everyone loves Peanut Butter, right (unless you are allergic).

As someone who doesn’t naturally like the consistency of oatmeal, do you have any suggestions for making this a bit crunchier? I made this recipe last night and the taste is fantastic. Could I perhaps cut down the almond milk? Or maybe I just need to add granola?

You could add granola but that would make your calorie count spike up. Instead of soaking it overnight, you could prepare it and eat it right away. It would have more of a cereal consistency rather than mush

Try using steel cut oats! They will soften up after Day 1 but I love the texture they provide. Also you can try adding crunchy peanut butter in place of almond or regular creamy peanut butter. Delicious!
