Bananas, ginger, turmeric, pineapple, lemon, carrot juice, and coconut milk for making a refreshing vegan smoothie

Hey, friends! How’s your summer going so far?

Made any rad travel plans?
Crashed a wedding?
Danced into the wee hours of the morning?
If no, why not?
If yes, go you.

My summer has been pretty grand.

So far we’ve gone to wine country, made frequent trips to the farmers market, finished up the content portion of our print cookbook (due out late 2015!), and have just generally been trying to relax. There’s something beautiful about warm afternoons spent on patios, sipping wine, and just taking it easy.

Let’s do more of that. Take it easy, shall we? Yes, we shall.

Fresh carrot juice made in a blender

One of the things I love most about summer mornings is a good, heart pounding workout followed by a seriously nutrient-packed smoothie. Yum.

I’ve been reaching for green things lately, but was in the mood for a switch-up. This recipe did just the trick.

Guess what?

7 ingredients
Super hydrating
Refreshing
Vitamin- + Nutrient-packed
Bright orange
Gorgeous
Zingy
Naturally Sweet
AMAZING

Glass of our refreshing and delicious vegan Carrot Ginger Turmeric Smoothie

Try this smoothie, OK?

If you’re into slightly sweet-tart smoothies with a kick from ginger, this is the one for you!

Also, does it get more hippie than making your own carrot juice? I think not! Make your mom proud and do it yourself. If the color and flavor notes of this smoothie aren’t enough, here’s a quick rundown of the health benefits:

Ginger // stomach soother, immune booster, infection fighter, anti-inflammatory badass (source). It’s nicknamed “the herbalist’s best friend” and has been a powerful plant in Ayurvedic and Traditional Chinese Medicine for a very long time (source)!

Banana // Digestion aid, potassium-packed, lowers blood pressure, healthy carbs, tastes like candy (source)

Pineapple // Vitamin C-packed, anti-inflammatory, digestion aid, antioxidant-packed, energy boosting, nature’s candy (source)

Turmeric // Anti-inflammatory, antioxidant-rich, battles cystic fibrosis, free radical-fighting, lowers cholesterol (source). Plus, it’s been used for medicinal purposes in India for nearly 4,000 years (source)!

Lemon // Vitamin C-packed, antioxidant-rich, natural antibiotic, skin brightener, tastes like summer (source 1 + 2)

Carrot // Antioxidant- and Vitamin A-rich, beta carotene-packed, vision booster, free radical fighter (source)

Ingredients

CARROT JUICE

  • 2 cups carrots
  • 1 1/2 cups filtered water

SMOOTHIE

  • 1 large ripe banana (previously peeled, sliced and frozen // more for a sweeter smoothie)
  • 1 cup frozen or fresh pineapple
  • 1/2 Tbsp fresh ginger (peeled // 1 small knob yields ~1/2 Tbsp)
  • 1/4 tsp ground turmeric (or sub cinnamon)
  • 1/2 cup carrot juice
  • 1 Tbsp lemon juice (1/2 small lemon yields ~1 Tbsp or 15 ml)
  • 1 cup unsweetened almond milk

Instructions

  • Make carrot juice by adding carrots and filtered water to a high speed blender and blending on high until completely pureed and smooth. Add more water if it has trouble blending / scrape down sides as needed.
  • Drape a large, thin dish towel over a mixing bowl and pour over the juice. Then lift up on the corners of the towel and begin twisting and squeezing the juice out until all of the liquid is extracted. Set aside pulp for smoothies, or baked goods (such as carrot muffins).
  • Transfer carrot juice to a mason jar – will keep for several days, though best when fresh.
  • To the blender add smoothie ingredients and blend on high until creamy and smooth. Add more carrot juice or almond milk if it has trouble blending. Scrape down sides as needed.
  • Taste and adjust flavors as needed, adding more banana or pineapple for sweetness, lemon for acidity, ginger for bite, and turmeric for warmth.
  • Divide between two glasses (as original recipe is written // adjust if altering batch size) and serve. Best when fresh.

  1. Bibi Twahir says

Super delicious! I omitted the lemon and the taste is still exceptional! Love the pizzaz of the ginger! The taste is so phenomenal that I will be making it again tomorrow morning! I also added collagen, mushroom and cinnamon to it!!!!Wow! Thank you! Fantastic recipe! This was my morning breakfast and as of my Eastern time, 12 midday, I am still full!

  2. Laura S. says

WOW THIS IS SO GOOD!! I just used water no almond milk but I am so impressed. I used to go to a local juicery and get their “glow” drink for $12 each (so expensive😭) and I was like why don’t I try to make my own, and it is so similar! I am so so so happy with this and how good it is. I used a little more ginger than the recipe because I am obsessed with it but of course make it to your liking! my first time making carrot juice too! so easy. thank you for this recipe!!!!

  3. Alieux Casey says

Hi I saw the recipe for the Carrot Ginger Turmeric Smoothie on Ig, but it say what time of day to try it or how often? Could this be a lunch alternative or for after workouts? I got all the ingredients and I wans to make this part of my meal plan but don’t know what meal

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

Hi Alieux, this is a great snack or you could enjoy it as a part of your breakfast or lunch!

  4. Coby says

This was such a good smoothie! I can’t eat bananas, so I subbed frozen mango to get that creamy texture. Prior to blending, I also added some collage powder and a scoop of hemp seeds to add some protein and fat. Delicious, and I love its anti-inflammatory properties!

  5. Janette says

Incredibly tasty, very refreshing and easy to make! Didn’t have turmeric on hand so, I added cinnamon instead. I will definitely make this again!

  6. Lori says

Delicious! I had leftover carrot juice and wanted to find something to do with it. I also added some leftover frozen mango with the pineapple. I used vanilla almond cashew milk. My husband and I are recovering from covid so the healing properties of the ginger and turmeric grabbed my attention. I’ll definitely make this again.

  7. Katy says

Made it as written (though I did purchase the carrot juice instead of making it), and it was delicious! Very flavorful and well balanced. Will definitely make again!

  8. Barry Finnen says

I used grated carrot instead of carrot juice. Next time, I will only use half of a banana, as I prefer a less sweet smoothie. I enjoyed the flavour. I also used yoghurt in place of almond milk. Thanks for the recipe.

  9. Anna B says

Incredibly delicious! My toddler and I made it together and he was delighted by the bright orange color of the carrot juice. We used soy milk and it didn’t alter the flavor at all. Delicious! Thank you!

  10. Priscilla Dodds Sanchez says

SO good! I did not strain the carrot pulp either; I used baby carrots and just blended them up with the water until they were super smooth and saved it to make more during the work week. Great recipe!

  11. Maria Benites says

So good! Easy to make . I used all fresh ingredients and did not strain out the carrot pulp, blended very well . Thanks !

  12. Theresa says

This is REALLY good. I love how the pineapple and banana lend a hint of tropical flavor. I used a small knob of fresh turmeric and didn’t strain out the carrot pulp. Everything else I kept the same. Even my 7 year old loved it. Yum and thank you for the recipe!

  13. Sophie says

Sooo good!! I was surprised how well all the different flavours go together. Definitely gonna make this more often. Tip: add a bit of black pepper (you won’t really taste it) to absorb all the nutrients from the turmeric.

  14. Cait says

what the hell. how can such a nutrient dense drink taste so incredible. what the hell!!!!!!!!!!! ill admit i used store bought carrot juice (but its just carrots and water i swear)! and hemp milk instead but wow wow wow this was incredible

  15. Bobbi says

I add ginger and turmeric to several dishes and beverages so I was interested in trying this. I liked the citrus tang of this smoothie. I also tried it substituting a cup of blueberries for the banana – yummy.

I’ve just made this. I’ll be honest and say i couldn’t be bothered to do the carrot part as I’ve been very active today and i need to have a sit down. It tastes lovely so will make it again soon.
This is the first smoothy I’ve made using my boyfriend’s nutri bullet that i don’t think he has ever used!
      Thanks for the recipe

  16. Monica Copeland says

Oh my!! This is a gift!!!! Delicious and power packed. I will be making this often. I also added three whole carrots with extra milk….had oat milk on hand so used that. What a treat!! Thank you for sharing. ❤

  17. Samantha says

This was so so good and easy!!!! I used a fine mesh strainer in place of a towel. And I used fresh turmeric root.
Probably one of the best smoothies I’ve ever had… Ever.

  18. Kay says

Thank you for this recipe! I’m allergic to almonds, so I substituted soy milk in here instead of the almond milk, and it worked well. I also used some frozen carrots I had on hand – was a good way to empty my freezer a little. I added your recipe to my recipe roundup because I thought it was so good. Thanks!

    • Kristi says

I made this with a few adjustments. I left the pulp as is and substituted 1/2 of the almond milk with coconut water. Absolutely freakin’ delicious! I currently drink a 16 oz green smoothie twice daily. Since my stomach can’t handle too much acidity, I will probably sub 16 oz of this every few days. Thank you!!

  19. Maz says

Yummy delicious. I didn’t strain the carrot and I used a frozen prepackaged single serving mix of pineapple, papaya and mango. Thank you! Delicious and nutritious.

  20. kristen says

Very frustrating recipe. I recommend reading ahead before making this recipe to adjust to your preferences. I did not like the fact that I ended up making 2 whole cups of carrot juice from following the recipe, when the recipe only calls for 1/2 cup. I did not want extra juice, so feel like that should’ve been an optional instruction. The recipe should’ve called for 1/4 cup carrots and however much water to make 1/2 c juice. Then as I continued to follow the recipe, I added a whole cup of almond milk as instructed. I should’ve known better. It was extremely watery/runny and not the way the consistency of a smoothie should be. So I advise starting out putting in 1/4 c almond milk (or less) and adding more if/as needed.

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

Hi Kristen, sorry to hear this recipe gave you trouble. The tricky part with making a smaller amount of carrot juice is that it doesn’t go over the blades of the blender so it doesn’t blend properly. Did you use frozen banana and frozen pineapple? That should help it be more thick.

  21. Robin Stewart says

This smoothie is so good.. I now drink it every morning.Thank you for including how to make the carrot juice..and the almond milk..so easy

  22. Kelly Hague says

In my 35 years I’ve never commented on a recipe but I’m so in love with this one i might print it and frame it. I have a bad habit of not measuring anything but it still came out delicious. Perfect for late late night studying. Thank you!

  23. Victoria says

    Hi!
I know I’m late and I wanna make this drink tomorrow… so I wondered if I could use any other kinds of dairy products, because the process of making unsweetened almond milk sounds waaaay to hard for lazy me lol.

Anyway I will for sure try with milk ? Hope it works xoxo

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Yeah that should work! Any dairy-free milk should do! My recommended ones being almond, coconut, rice, or oat.

  24. Emily says

Love this recipe! I doubled the turmeric and ginger which gave it a little kick. I’ll definitely be making this again!

  25. Ver says

I added one scoop of vanilla protein powder to this smoothie (to give it more of a protein boost).
It turned out wonderful! Tastes like and looks like an orange cream sickle!

    • Kimiko says

OMG, omigoodness this was delicious 😋 I made to for my family tonight as they loved it! I didn’t make the carrot juice, instead added 3 carrots and an extra cup of almond milk. I’ll be making this again … and again, and again 🥰

  26. Amanda says

This is a great alternative to my usual berry smoothie! I didn’t have pineapple but it still tastes yummy! I didn’t strain the carrots I just added more water to make it thinner!

  27. Ashlee says

No carrots? Sub orange juice. The Recipe still came out amazing (the turmeric and ginger gives it the real pop). I will try this again next time and purchase pure carrot juice.

  28. Stacy says

I turned this beautiful orange drink into a smoothie bowl simply by reducing the nutmilk and using whole carrots and frozen fruit. I topped it with sliced strawberries, flaked coconut, and sliced banana. I love the ginger in it – soooooo good! It was an amazing breakfast! Thank you. :)

  29. Amy says

I’ve been trying immune-boosting recipes since I work in health care. I love this smoothie!! I substituted bottled carrot juice and I used cinnamon instead of turmeric and let me tell you—I will drink this often!

  30. Rachel says

I really love this smoothie!!! I don’t bother juicing the carrots, I just add 1.5 cups shredded plus 1.5 cups of water and left everything else the same- SO GOOD. Will add even more ginger next time because I love that zing soooooo much.

  31. Zanna says

I strongly recommend cooking the carrots for 7 minutes in a little bit of water (which you also add to the smoothie as some nutrients leak into the water while cooking) and some fat as your body won’t be able to absorb all nutrients otherwise. The extra cooking and cooling down time is well worth it :-)

  32. Julissa says

Yummy! I was looking through Pinterest and found this because I was looking to use up my leftover carrots. This is so refreshing & nutritious ..this will definitely be one of my go to recipes!

  33. Elizabeth Askander says

This was sooo yummy!!! I added fresh tumeric (wear gloves) and added all the carrot juice. It was so delicious and light and refreshing! I used organic banana and pineapple. WILL BE MAKING AGAIN

I am going to try this for my husband’s arthritis…not sure yet which type it is…my question is, how many times a day do you drink it…just once in the morning?

    • Gospel says

Excellent recipe! I didn’t make the carrot juice separately. I just grated the carrots and popped them straight into the blender with all the other ingredients. All blended well into a creamy smoothie. Very yummy 😋 I’ll try adding more turmeric next time just to enjoy more health benefits.

  35. Carla says

Yummy!!! Good for the liver!!!! Took no time to make and easy enough so I don’t have to go buy a juicer!!! Even my “ginger” picky husband liked it!!! Best served cold!!

    Carla

  36. Ella says

Great recipe! Creamy and refreshing with a light zing. I didn’t strain the carrot juice, however it was still deliciously smooth. Used cow’s milk as didn’t have any cashew milk, but looking forward to trying it again using a healthier milk alternative! I really like recipes that don’t include too much fruit and have a reasonable portion of veg. Tip for the gals: I also added chia seeds as I personally find they really help with PCOS and cysts!

  37. Brandon says

Delicious! I made a couple necessary modifications based on what I had onhand (a peeled, frozen lemon half in place of juice; only 5 chunks of packaged, frozen pineapple; whole milk in place of almond milk; I only had about half the amount of ginger called for; and the banana I used was very ripe and frozen). I also opted to make the carrot juice with the proportions recommended but without straining it (more fiber; less prep). Despite these changes, the result is creamy, bright, sweet and has some appealing earthiness from the carrot. I will certainly make it again.

  38. Emily says

This smoothie is AMAZING! I just got a vitamix for Christmas and this is one of the first things I made. Even made my own almond milk to put in it. Getting ready to make it for the third time. Thanks for the delicious recipe! xoxo

  39. Gina says

This looks delicious! I have one question. I’m very allergic to banana – is there a substitute you’d recommend that wouldn’t affect the flavor / texture much? Thanks :)

  40. Cindy says

I made this it is tasty! I did not Strain the carrots, I would probably add ice next time to make it colder, or I froze the other half of pineapple so that will make it colder next time also, used fresh ginger & tumeric, should have grated tumeric because I had chunks of it!

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

Thanks so much for sharing, Cindy! We are so glad you enjoyed it! If your blender is not high-powered, then yes, grating fresh ginger/turmeric would probably be best! Next time, would you mind leaving a rating with your review? It’s super helpful for us and other readers. Thanks so much! Xo

  41. Sheetal says

Oh- I forgot to add, also don’t strain the carrots- just throw into my vitamix for blending and it’s perfect! Save the extra carrot juice for a few more glasses before starting a fresh batch :)

  42. Sheetal says

I love this smoothie!!!!!. Started making them daily about 2 weeks ago for my husband primarily for Anti inflammation needs. I’ve also put mangos when I ran out of pineapple. Not sure if he’s felt any difference just yet ( would love to hear about results people are seeing ), but plan to incorporate this into our diets regularly ! Can you tell me the sugar intake with the existing ingredients ? I saw calories were 144?

Taste great! Im not a big fan of the taste of carrot juice. I halfed the recipe and substituted coconut milk instead of almond. I also added 1 tbsp of chia seeds and a splash of oj. It tastes wonderful, i couldnt taste the carrots at all (yay!)

  44. Laura says

We loved this smoothie. Due to time constraints we used store-bought carrot juice – we added an extra frozen banana and one clove of frozen garlic. We substituted for milk for the almond milk. Going to try it again tonight with a little more garlic. I can’t believe how healthy it tasted but also delicious .

Hi Dana – THANK YOU! I was searching for a simple smoothie recipe that would help with my mothers chemo side effect (Nausea) – this is perfect! Not only did it taste good, it was super easy to make (I opted for pre made organic carrot juice) and tossed in an extra 1/2 of a banana (for extra potassium).
    Very, VERY tasty!

Regarding the EO question: I would not recommend consuming essential oils.
I am aware that many of the pyramid brands suggest consumption, but these are volatile compounds and you must use them with caution. (Even topically, they can be extremely harmful if not used with care). There have not been studies done on the consumption of these products. If they contain heavy metals, plant essences can be very dangerous as the organs have no way of breaking them down (bioaccumulative). That said, if you are extracting your own and are fully aware of the location source and safety, there are certain essential oils that can be beneficial in moderation. I’d personally stick to fresh local ingredients or high quality extracts/ tinctures:)

Just made this (2 bananas instead of 1) and oh my goodness, I found myself trying to get every last drop in my mouth!! It will definitely be made more and shared! Super delicious!! Thank you for your wonderful recipe!

  47. Erin says

Dana, this is a delicious smoothie. I just made it and I missed the step where you suggest straining the carrot juice. In the smoothie, the pulp gives it a bit more thickness that I like without being chewy. I also added a dash of black pepper to help my body absorb the turmeric. Thank you for sharing the recipe!

    • Jan says

My daughter sent this recipe to me, to make for my husband. It is nothing short of spectacular! I didn’t change anything about the recipe at all. I am wondering if you could make a double batch and keep half in the fridge for the next day?

  48. Yasmine says

This smoothie was so unique and packed with flavor! I don’t know if I would have made this if I didn’t have fresh turmeric root that I wanted to use, but I’m so glad I did! Will definitely make this again.

  49. Melissa Leigh says

This was absolutely delicious! It has become my favorite way to incorporate turmeric into my diet. I made the carrot juice first but didn’t bother straining and then just added everything else to the Vitamix. I also added a pinch of black pepper to increase the absorbability of the curcumin in the turmeric. Thanks for the great recipe!

This smoothie was so tasty and pleasant to drink for breakfast. I used store bought organic carrot juice instead of making my own, and used strawberries instead of pineapple since I didn’t have any at home! I will definitely be making this again :)

Dana, this is amazing! I’ve just had this for dessert, having just done a 30-minute Pilates session (that was my first in well over a year due to various injuries and recovering very slowly from major shoulder surgery…), and this sat very well with me indeed. I was first introduced to carrot and turmeric juice when out in the Malaysian jungle 3 years ago, doing a study on endangered spiders, and fell in love, but, even as a smoothie fan, never thought to put these orange wonders into a smoothie. What a wonderful idea! I sadly can’t have citrus or pineapple, but it still tasted wonderful without: I added cinnamon as well as the turmeric. I think that this will become a staple with me. :)

P.S. Love your sense of humour! “Anti-inflammatory badass” describes this wonder juice exactly!

  53. R M Walters says

030219 – i made this smoothie, and it was great. i substituted the almond milk with canned (thick and creamy) coconut milk. frozen pineapples took a bit to churn and not too sweet. all and all a good recipe. i substituted the cinnamon w/turmeric water from previously boiled turmeric.

Ahhh this is so great. I know that ginger and turmeric have immune fighting powers, so it’s so great to know they are in here. I threw in some leafy greens cause that’s how I roll lol they were mild and didn’t change the flavor, otherwise everything is exactly the same and this tasted great, thank you!

    Hi Dana,

thanks for this interesting recipe. I was looking for something with Turmeric since I have read that it helps with vitiligo. I might give this a shot. Carrot also has positive impact on our skin. Back in the day my friend was experimenting with carrot a bit too much and she got this orange skin-tone :)

  58. Merdith says

OMG this is delicious! Creamy and decadent with some spicy warmth, it almost tastes like a dessert to me. Yum! I used unsweetened vanilla oat milk instead of almond milk, and threw in some hemp hearts, ground flax seeds and a bit of black pepper and it was amazing. Thanks for another great recipe Dana!

  59. Dana says

This has a very interesting and mildly addicting flavor. In other words, I love it! The sweet pineapple balances out the turmeric flavor quite nicely. My kids even like it, which is shocking. I used a pinky of fresh tumeric root in place of the ground turmeric. Will definitely be making this part of my smoothie rotation. Thank you!

I wasn’t sure how the ingredients would work together but they were delicious! Great combo! I have been looking more ways to eat ginger and turmeric so this definitely fit the bill! Thanks for sharing a great recipe!

  63. Erica says

Another winner!! I used mango instead of pineapple (that’s all I had on hand) and used my Vitamix to make the carrot juice before adding the other ingredients so I didn’t have to dirty up a ton of equipment. So so so good!!!

  64. Tessie says

Hi, I am on a reduced potassium diet. I think I am going to try this smoothie out but substitute the pulp of the carrot for the banana and add honey to sweeten. Would that work?
