Large glass filled with our No Bake Cookie Dough Blizzard recipe

Remember those Peanut Butter Stuffed No-Bake Cookie Bites we made last week? Yeah, we’re gonna need those again.

Blender filled with our Peanut Butter Banana Blizzard recipe

I have been a blizzard fan for as long as I can remember. Who isn’t, really? But I still recall the day I learned that my favorite blizzard – the banana cream pie topped with mounds of whipped cream – had 60 grams of sugar in a small. A small! That news caused me to steer toward a “mini” from then on.

Since going mostly dairy-free at the beginning of the year, I’ve been having major blizzard cravings that I just can’t shake. Enter: the No Bake Cookie blizzard that just happens to be vegan and gluten free. Oh joy.

This little masterpiece is quite simple to throw together. You just need two ripe, frozen bananas, a healthy scoop of peanut butter, a splash of non-dairy milk and you have your base. Next, drop in a no bake cookie bite or two, give it a few more pulses, and you have bits of no bake cookie “dough” throughout a creamy peanut butter banana “blizzard.” Sound good? Yeahtrustmeitis.

This baby is legit. It’s:

Smooth, creamy, and perfectly sweet from the banana
Slightly salty from the natural peanut butter
Fudgy from the bits of no-bake cookie dough dispersed throughout
& Completely vegan and gluten-free

It kind of goes without saying, but it’s practically health food. Yipee!

Ingredients

  • 2 ripe bananas (previously peeled, quartered, and frozen)
  • 2 Tbsp crunchy, natural salted peanut butter
  • 1/3 – 2/3 cup non-dairy milk (I used Silk Coconut)
  • 3-4 whole PB stuffed no-bake cookie bites

Instructions

  • Add your bananas, peanut butter, and non-dairy milk to the blender and blend until thick, creamy and smooth. Start out with less milk to ensure you achieve a thick texture. Then add more to ensure that it all blends evenly.
  • Once blended, drop in two no-bake cookie bites and give it two more pulses to loosely mix.
  • Pour into serving glasses, and top with another crumbled no-bake cookie bite (optional). Serve immediately.

BEST SMOOTHIE EVER. I didn’t have a full frozen banana so I used about 3/4 of one and about 3 or 4 frozen strawberries and 1.5 tbsp. peanut butter. It was so yummy, not too banana like or strawberry like. LOVE!

That milkshake is EPIC! However, it would take me an entire day to work off those calories. Maybe I can convince myself it would make a good enough dinner since it contains peanut butter? :)

    Great!

I’m vegan and I think it’s great that you are posting more and more vegan recipes.
This “blizzard” seems exceptionally wonderful – better than the original ones!
Have you tried whipped coconut cream or whipped soy cream (Soyatoo)? I enjoy them more than when I ate whipped cream.

Yes I have! I made some coconut whipped cream for a few of my hot chocolate recipes last year. Isn’t it awesome?

      • Eric says

It is, I enjoy the light coconut flavor it has!

Coconut caramel has the same slight coconut flavor and is wonderful too!

I never have milkshakes/blizzards/thickshakes…. I don’t know why, it just never occurs to me. Needless to say, I am inspired!

That looks so good! I was thinking about making a milkshake tonight too despite the new layer of snow I woke up to. Let’s face it: rain, shine, snow, hail- it’s always ice cream weather.
