These veggie coconut wraps have our heart. Not only are they easy to make, requiring just 8 ingredients and 5 minutes to prepare, they are the ideal easy lunch or snack! Let us show you how.

We were turned onto these Coconut Wraps* by Sarah’s Day. After ordering them and trying them for ourselves, we were hooked! They’re made with 4 simple ingredients and quite versatile. Enjoy them cooked or raw (we prefer raw), savory or sweet (we prefer savory).

While the wraps themselves are delicious, the fillings are where it’s at. We went with hummus and our beloved Green Curry paste for sauce and plenty of fresh vegetables.

Red bell pepper, carrots, creamy avocado, crispy kale, and cilantro are packed in tight and marry well with the hummus and green curry paste. Total swoon!

These are the ultimate quick and delicious snack or lunch. We’ve been enjoying one or two alongside a big green salad for the ultimate midday treat. We haven’t tried many other fillings for the wraps because this version is so tasty. But feel free to substitute what’s in season and available near you.

5-Minute Veggie Coconut Wraps

An easy, incredibly fresh and delicious lunch or snack idea: Grain-free coconut wraps with hummus, curry paste, and tons of fresh vegetables. Just 8 ingredients and 5 minutes required.

Ingredients

  • 5 Coconut Wraps (we love this brand in the flavor turmeric)
  • 2/3 cup hummus (store-bought – we love King Harvest brand)
  • 7 1/2 Tbsp green curry paste (or store-bought, though fresh is best)
  • 1 red bell pepper – thinly sliced
  • 1 cup fresh cilantro (approximately 1 large bundle)
  • 1 1/2 cups shredded carrots
  • 1 ripe avocado – sliced
  • 2 1/2 cups kale – chopped

Instructions

  • Lay a single coconut wrap on a clean surface or cutting board. Add 2 Tbsp (~32 g) hummus and 1 1/2 Tbsp curry paste (~22 g) and spread on the end of the wrap closest to you.
  • Add bell pepper, carrots, avocado, kale, and cilantro and roll tightly away from you. Place seam side down on a serving platter. Repeat until you have 5 coconut wraps (or as many as you desire).
  • Best served fresh. Can store leftovers covered in refrigerator up to 1 day.

Notes

*If you can’t get your hands on coconut wraps, feel free to substitute something similar, such as almond flour tortillas or flatbread. The toppings would also work well as a veggie sandwich on toasted bread.
*Be sure to keep your coconut wraps well sealed for freshness. And if they are dry or brittle, try wrapping in a damp, warm towel to rehydrate and soften.
*Prep time does not include making green curry paste or hummus.

    Made it for dinner with some -more filling- adjustments!

    I added rice (seasoned with salt, pepper, fresh turmeric root, fresh ginger root)

    Also served it with a homemade peanut sauce and.. *chef’s kiss*

    My roommates are the luckiest people alive, because I’m always making your recipes. Many times, it is foods we have never eaten before, like these coconut wraps. I made these tonight, and they were absolutely delicious. I made the green curry paste from scratch earlier today and I could just eat it by itself. I added an extra Serrano pepper. Also, I might have added an extra tablespoon or so of the lime juice and lemon juice, so it came out a little runny – I added a tablespoon of Chia seed and a teaspoon of flaxseed meal and used the sauce setting on my blender; it thickened perfectly, and you couldn’t taste the flax. My oh my – I will be bookmarking this recipe! You are amazing!

    I am impressed! I could not find any coconut wraps so I used regular ones but for the rest, the recipe is amazing! Loved them and my husband asked me if we could have these for lunch from now on instead of salads! Same as every recipe I’ve tried from you before, it’s amazing and so simple to make!

    Love these quick vegan snacks! I can’t do legumes, so I replaced the hummus with vegan cream cheese!!! Yum, I loved the combo of the spiciness of the curry and the sweetness of the cream cheese! I also used Trader Joe’s GF brown rice tortillas instead of the wrap, and they worked just fine! Thanks for this great recipe!

    These were so dang good. I used the cassava coconut wraps because that’s what they had at Whole Foods. I added a tiny squeeze of lime juice. I’m obsessed and am quickly becoming your number one fan. I have no food restrictions but my boyfriend is vegetarian paleo and I have thoroughly enjoyed all the heathy recipes I’ve made from your site. Thank you!

    I just made these and they are SO GOOD. I used spinach wraps instead of coconut (couldn’t find any). One question- can you use curry paste from the store? Also, do you have to cook curry paste before using it?

    Oh, I love watching Sarah’s Day videos too! The coconut turmeric wraps look great, and I’m sure I’ll fall in love with them when I try them! Your take on a coconut veggie wrap is stupendous, no surprise! Truthfully, I really like that you add pictures of the setup because it helps immensely with following along with the recipe. The individual ingredients are valued even more with the pictures in the beginning!

    Do they have a REALLY strong coconut flavor/fragrance? Neither my husband or I are huge coconut fans. We do use coconut milk in cooking, but that’s about it. Don’t care for coconut flakes in anything. Would you suggest using a different wrap? If so, what would you suggest? He’s allergic to corn, so no corn tortillas either. Thanks!

    I am a full-time RVer getting ready to head north out of Florida, so I will be several months without a delivery address. I won’t be able to get these wraps delivered by amazon until next winter. Darn
