I have just the thing.
We’ve gotten really into hot toddies (especially in winter) and have been mixing up different variations, always including bourbon. Hot toddies and bourbon go together like PB&J – trust me.
Origins of Hot Toddy
It’s believed that the hot toddy originated in India and comes from the Hindi word “taddy.” The first written recipe was in 1786 and included alcoholic liquor, hot water, sugar, and spices. Later, the drink became popular in the UK and the US. And by the mid-19th century, it was a popular remedy for the common cold.
The following is our inspired version made with a homemade simple syrup.
Chili Cinnamon Hot Toddy
This version is special because it starts with a homemade simple syrup that’s naturally sweetened with maple syrup. It gets its flavor with an infusion of both cinnamon and chilies.
It’s subtly spicy and warm and altogether lovely. Keep it on hand for other winter cocktails that could use a spicy-sweet kick!
It’s toddy time! Start with half a lemon. Then add your simple syrup.
Next? A generous pour of bourbon. Oh mama.
Hot water to top. Then garnish with a lemon wedge and cinnamon stick and it’s party time.

Spiced Cinnamon Bourbon Hot Toddy
SPICED CINNAMON MAPLE SIMPLE SYRUP
- 1 cup maple syrup (or other sweetener of choice, such as cane sugar or honey if not vegan)
- 1 cup water
- 2 whole cinnamon sticks
- 1 dried red chili pepper (see notes)
- 1/2 tsp red pepper flakes
- 1/2 medium lemon (juiced)
- 3-4 Tbsp spiced maple simple syrup
- 2 ounces bourbon (rye or traditional // 2 ounces = ~4 Tbsp)
- Hot water (to fill)
- Lemon wedge + cinnamon stick (for garnish)
- SIMPLE SYRUP: Add maple syrup, water, cinnamon sticks, chili, and red pepper flakes to a small saucepan and bring to a boil over high heat. Reduce heat to low and simmer for 5 minutes. Then remove from heat and let steep for 30 minutes – 1 hour (or longer). Strain and pour into a glass jar for serving.
- ONE HOT TODDY: To make a single toddy, add the juice of half a lemon, 3-4 Tbsp Chili Cinnamon Maple Simple Syrup, 2 ounces bourbon, and hot water to top (use less water for a stronger drink, more water for a weaker drink).
- Garnish with another cinnamon stick and lemon slice or wedge and serve. The longer it steeps the stronger the cinnamon, lemon flavor becomes.
- Repeat for more drinks or make a large batch to serve a crowd by simply multiplying ingredients by number of drinks you need.
*This recipe as written makes enough simple syrup for ~6 hot toddies. The ingredient section for “HOT TODDY” defaults to the quantity needed to make 1 hot toddy.
