These EASY cookie dough bites start with a creamy combination of cashew butter, maple syrup, and vanilla. Then come the almond, oat, and coconut flours to bring the dough together. Dessert with healthy fats and a touch of fiber and protein? Twist my arm!

Then it’s time to add the ever-essential chocolate chips (we like mini chips!). They wouldn’t be cookie dough bites without them, after all!

Finally (~4 minutes later…) the ingredients are mixed, and it’s as easy as scoop, roll, devour! No chilling required, friends.

No-Bake Cookie Dough Bites (5 Minutes!)

Chocolate chip cookie dough energy bites that taste just like cookie dough! Vegan, gluten-free, and naturally sweetened. Ready in 5 minutes with just 1 bowl and 8 ingredients!

Ingredients

  • 1/2 cup raw cashew butter (we like Artisana)
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla extract
  • 2/3 cup almond flour (we like Wellbee’s or homemade)
  • 1/2 cup oat flour (ground from rolled oats // ensure gluten-free as needed)
  • 1/4 cup coconut flour (or sub more oat flour)
  • 1/8 tsp sea salt
  • 1/4 cup dairy-free mini chocolate chips (dark or semi-sweet // we like Enjoy Life // or chopped chips/chunks)

Instructions

  • To a medium bowl, add raw cashew butter, maple syrup, and vanilla extract. Stir well to thoroughly combine. Next add almond flour, oat flour, coconut flour, and salt. Mix very well. You may need to knead the dough with your hands. Fold in the chocolate chips.
  • Scoop out tablespoon-sized amounts of dough and roll into balls, repeating with remaining dough.
  • Enjoy at room temperature or chilled from the refrigerator! Store in a sealed container in the refrigerator for up to 1 week or in the freezer for up to 1 month.

    Super easy and a great quick sweet snack! I didn’t have chocolate chips on hand so I rolled some in cinnamon sugar and some in cocoa powder sugar. I also added a 1/2 tsp of almond extract because I was using sunflower butter which is kind of bland. Very happy with the recipe!

    DELICIOUS! I used tahini and peanut butter (didn’t have cashew butter), ground oats and ground coconut flakes (those sort of turned into coconut butter) (didn’t have almond flour so I used more of the other two), 1/4 cup syrup instead of 1/3. Soooo good! Next time I’m doubling the recipe. Hope to get more of the called-for ingredients soon, too!

        Updating to say I continue to love these. I’ve bought coconut flour and almond flour specifically for this recipe! But because I’m a peanut butter lover, I use peanut butter instead of cashew butter. They’re peanut butter cookie dough bites! I also like to use rolled oats and coconut flakes to give some texture.

      Hi Pam, We haven’t tried these without oat flour, but you could try using a bit more coconut flour and almond flour until the right consistency is reached. Check out the photos and video to gauge how much flour to add. Hope that helps!

      Hi Isabel, cashew flour would be the next best option if you can have that! Otherwise, a mix of oat + coconut flour might be okay, though the texture won’t be the same.

    Really good! It reminded me of maple fudge, the texture and the taste (well, if you remove the chocolate chips 😀).
    If I do the recipe again, I would reduce the maple syrup. It’s a little too sweet for my taste, but the kids loved it!

    we love this!!! so easy and delicious. i use less maple syrup because 1/3 cup is too sweet for us, and it is still delicious! great consistency too.

    Made the recipe as written, except I subbed smooth natural PB for cashew butter, and they are absolutely delicious. It’s hard to stop eating them. I made my own oat flour in the food processor, and though it wasn’t super, super fine like the kind you can buy in the store, they turned out perfectly for much less money than premade oat flour.

    I love this blog for the simple recipes that turn out consistently well. Thank you!

    This is such an easy, delicious treat loved by kids and adults! I have used cashew butter and peanut butter but prefer pb because I love a good pb&chocolate dessert. It is just like cookie dough! think it tastes even better the second day.

    These look great- for them, and other unbaked or not-yet-baked vegan recipes I thought one wasn’t supposed to eat unbaked flour? But almond , coconut and oat flours are safe? Thank you!

      Hi Karen, we haven’t found it to be an issue, but if concerned, you can make homemade almond flour and oat flour and use oat flour in place of coconut flour. That way you’re just consuming blended up oats and almonds!

    Did this with natural peanut butter (it was the only nut butter in the house) and drizzled melted chocolate icing (from another MB recipe!). It met with the greatest of approvals from the most critical of judges… my husband and granddaughters! This is a great one to make with kids. My 3 and 9 year old girls had a blast mixing and rolling.

      Hi Jen! We think these could work with tahini and other nut butters! The flavor of other nut butters might be more pronounced, we find raw cashew butter has the most neutral flavor! If using a different nut butter you might need more or less flour. We suggest checking out the consistency of the dough in the photos and video!

      Hi Susie! This recipe relies heavily on nuts on the texture of the cashew butter and almond flour, because of this we don’t think it will work completely nut free!

      Maybe you could try using sunflower butter (a seed not a nut so many people with nut allergies can eat it!) or tahini, and subbing coconut or oat flour for the almond meal? It might not be a perfect substitution but at least it would be nut free :)
