Stack of gluten-free vegan Peanut Butter Cup Chia Seed Energy Bites

Sometimes, “real” food sounds exhausting and you just want something quick and easy to throw into your purse and call “lunch” without anyone judging you.

Well, consider this a judgment free zone. And if today is one of those days, here is my solution: Energy bites!

5 ingredients
15 minutes
Naturally sweetened (when using naturally sweetened dark chocolate!)
Tastes like a peanut butter cup

Get on board.

Oats, chia seeds, dark chocolate, peanut butter, and dates

I’m kind of into quick and easy right now.

Warmer weather has meant more adventuring for us and I love having snacky things on hand for sporadic activities. I’m like that weird friend of yours with all the mom things in her purse who doesn’t actually have any kids. No sign of babies around here, just so many snacks.

Blender with freshly blended dates for making energy bites

So, energy bites! 5 ingredients:

Dates
Peanut butter
Chia seeds
Oats
Dairy-free dark chocolate

The good news about these little gems is they’re totally customizable! No peanut butter? Sub any other nut butter. Not into chocolate (seriously Rhonda?)? Omit it and add more oats and chia seeds. Never heard of chia seeds? Sub flax or hemp seeds. It’s that easy friends.

Blender filled with ingredients for our simple Peanut Butter Cup Energy Bites

This is basically hippie cookie dough. Take a spoon and eat it straight. (Who on Earth would do such a thing? Me –  I would.)

Or reach down in there and roll the batter into little portable energy bites.

Your friends are gonna be so happy to see what’s in your mom purse.

Course Dessert, Snack
Cuisine Gluten-Free, Vegan
Freezer Friendly 1 month
Does it keep? 1 Week

Ingredients

  • 1 cup dates (pitted // if dry, soak in warm water for 10 minutes, then drain well)
  • 3 Tbsp all-natural salted peanut or almond butter
  • 1/4 cup dairy-free dark chocolate (roughly chopped)
  • 1 Tbsp chia seeds (or sub flax or hemp seeds)
  • 2/3 cup rolled oats (gluten-free as needed)

Instructions

  • Pulse pitted dates in a food processor or blender until they’re in small pieces or it forms a ball (see photo).
  • Add oats, chocolate, chia seeds, and peanut butter and pulse or mix until combined. You want there to be consistently small pieces but not overly processed.
  • Carefully roll into 1-inch balls (29-30 grams per ball), using the warmth of your hands to mold them together. Should yield 14-15 balls (amount as original recipe is written // adjust if altering batch size).
  • To set, pop in fridge or freezer for 15 minutes. Otherwise, eat as is! Will keep fresh in an air-tight bag or container for up to a week. Freeze for longer term storage.

  1. Julie Carlson says

These are incredible! I left out the chocolate (only because we don’t have any here) and added a few more oats. Definitely going to keep a stash of these in the fridge at work for a 3 o’clock snack. :o)

  2. Hilary says

Delicious, super easy, my toddler loves them too. I don’t have time to hike or anything cool like that, so I’ll just eat these at night for a treat! Or breakfast or anytime I want chocolate. I did buy the “hippie cookie dough” thing, but it’s totally true!

  3. Rose Silford-McLoughlin says

Love the recipe! I have made my own energy balls a few times but never thought to add Chia Seeds. I will definitely give that a go next time. And good idea in adding the chocolate! A great way for these energy balls to also fix that chocolate craving. I might also try it with some cocoa powder.

  4. Diana says

I made these while watching the polls on tv. Love them!! I substituted my peanut butter and oats, but kept it at 5 ingredients. Shared my pic on Instagram @dmrodrigzz with the hashtag #minimalistbaker <3

  5. heather says

AMAZING! So simple and absolutely delicious! Start to finish, including cleaning up, is a breeze. I used about 1 cup of oats, but otherwise made as instructed. My partner thinks they taste like snickers. I’m gearing up to make a second (double) batch right now!

  6. Emily says

These are absolutely delicious! The only problem is that I’m getting a bit bloated after eating… is it possible that the chia seeds are supposed to be soaked prior? I’ve never just added chia seeds to things without soaking before so I don’t know if this is what could be causing it (I can’t stop eating them regardless haha)!

  7. Amy says

    Oh my!
I didn’t have any chocolate so I substituted my attempt at chocolate:
    1/8 cup cocoa
    1 tbsp coconut oil
    1 tsp Stevia
I also don’t have a food processor. The Vitamix had a hard time moving it, but I got it chopped up enough to dig it out into a bowl and cut the clumps with two knives. After that, it behaved well when rolling into balls.
Then, OH MY! So scrumptious, and fun texture. Plus, I can’t even detect the weird Stevia flavor. What a wonderful new phase in my snacking life. Thank you so much.

  8. Janice says

I Love how you always suggest substitutes ingredients in your recipes, making them practical and simple :)And soooooo delicious !

  9. Harry Happer says

Hi! I just wanted to let you know that you are an amazing blogger. I love your posts, and I use your recipes every time I want to make something special for someone, like my parents’ birthdays. They always turn out amazing, and this recipe sounds so good.

  10. Ellen says

These are FANTASTIC! I was skeptical but honestly these are so delicious! They totally satisfy my chocolate and cookie cravings. My dates were just a touch dry so I added a bit more peanut butter and it worked well :)

  11. Nicole says

These are delicious – the kids love them! My 3 year old’s preschool is nut free so I replace the peanut butter with tahini. Thanks for sharing

  12. Scarlet says

These are sooo good! I decided to add a few more things at the last minute: chopped walnuts, sea salt, a little ground flax seed and cinnamon. The sea salt stands out and is a nice touch. I also ended up adding a little more peanut butter and these taste just like a peanut butter cup. I love the flax seed – it adds a nice texture and crunch! Thanks!

  13. Julie says

I tried to make these in my Blendtech and it jammed up the blade. Maybe I didn’t chop the chocolate fine enough. I just didn’t know what setting. And so I added a bit of liquid. Then the mixture was too wet. So then I added more oats and some chopped peanuts. Now the mixture is in the fridge firming up before I attempt to ball them. What did I do wrong?

  14. Jill says

I made them with dates, raisins, oats, maple syrup, 2 tea spoons of peanut butter and a few cashew nuts. SO GOOD. Finally a healthy snack that doesn’t take ages to make, just mere minutes.

  15. Carlita says

I didn’t measure a thing! Just threw all the stuff in my food processor according to how much I had, and holy cow. These are SO GOOD! Thank you for the recipe. I was going to Kroger for peanut butter chocolate chip Lara bars, but thought, Let me see what I’d need to add to dates, coconut, peanut butter, and cacao powder. Oats and chia seeds! Bam! So easy, so fast, so tasty. I’ll be taking these to parties, fo’ sho’.

  16. Esther says

My husband came home from work, rather excited a couple of days ago and launched into making these. I must say that by now we had eaten many different types of “raw balls” and had tired of them somewhat. When he rolled the first one and offered it to me I almost refused but ate it out of politeness. BAM! My mouth exploded and I fell in love! These are hands down, the most delicious things! We both are far too many and soon had to make a new batch. thank you for the recipe!

  17. stephani says

Oh my goodness, I absolutely love your website. I’m a vegan and every time I fancy something I type into google and you are always up there with an amazing recipe for me to try. I have done quite a few up to now and they are always incredible. Thank you so much for taking the time to do this website.

  18. Caryll says

I’m not a big fan of dates–is there something else I could substitute it with? Or would the mixture still ball up if I just exclude it all together?

    • KelsMom says

Made mine with a few slices of dried apple instead of dates. Next batch was made with fresh apple slices left from a fruit/cheese tray. Both versions were great and the fresh apple version did not overwork the processor motor.

  19. tim says

    Love your site.
Have made these babies, following your recipe to a tee, many many times. They are deeeelish! I keep them in the freezer, and as soon as I’m running low, I make a new batch. Every time my daughter comes to visit, she asks if there are any energy balls in the freezer! Highly recommend these bites.
Thank you for another great recipe.
    Cheers

  20. Abby says

Just made these today!!! Doubled the chia and used almond butter and some powdered pb. YUM. These will be a good snack but won’t last long with my sweet tooth!!:)delish!!!

  21. Jeannine says

Came across this delicious looking recipe and just made it tonight to take to my daughters volleyball tournament tomorrow, the only problem is they were so delicious there aren’t any left for tomorrow! Great recipe :)

  22. Mollie says

    Yum yum yum!!!
I gave one of these to my 9 year old sister without telling her what they were. She took one bite and asked me if they were a new Reece’s product (before stuffing her face). I then made the mistake of telling her they were actually good for her which saw a slightly disgusted expression emerge haha. She was soon sneaking them out the fridge whilst I wasn’t looking though.
Not only are these delicious but they’re really great at tiding you over between meals or when you need a bite to eat without stuffing yourself before (or during) a workout.
Also great fun for little ones to help roll up.
Seriously yummy. These have become a staple in our house.

  23. Stephanie says

Just made these. I had a few spoonfuls out the bowl before and they are amazing! I’m so glad my husband and kids hate peanut butter because I want these all for myself. Great recipe, thanks for sharing! Keep up the good work

  24. Katie says

I think this recipe is a good start. When I followed it exactly I didn’t really taste much other than the dates. I adjusted by adding a 4th tablespoon of PB, a few dashes of cocoa powder, and about 1/4 tsp salt to bring out the flavors. Once they were rolled in balls and set, I sprinkled with just a touch more of sea salt and they were perfect. Now the PB/choc flavor is definitely there and the dates don’t overpower.Definitely going in my rotation. My husband ate almost all of them!

  25. Danny says

Just made these today, and they’re delicious. They came out a little sweet though, so I added some salt and it made them perfect.

  26. Andria says

These are really good. My first time (to my knowledge) trying dates and I enjoyed them ! I made it without the chocolate and loved it ! Thanks for the recipe

  27. Sarah says

These are sweet and absolutely yummy. They give good energy, I’ve eaten a few and then gone and done training and they were great. They’re pretty sweet!!! Vegan cookie dough is about right! I can see myself making them again. Thank you very much for the recipe.

  28. Jackie says

Love, love, love! These taste just like a no bake cookie. I used powdered peanut butter with 1T of coconut oil and Carob Chips in mine, turned out great.

Love your site – thanks for all the great ideas!

  29. Amber Mustard says

Do you think I could sub cocoa powder instead of chocolate? Only craving something sweet and can’t leave the house since kids are asleep!

  30. Aparna says

I did not soak the dates to get a longer shelf life out of these(like they’re gonna stay around that long ;)). Used a spiced dark chocolate that I had on hand.. Those warm spices took the taste to the next level! Loving these as a pre workout snack!

  31. erin says

Perfect. ..delicious even straight out if the freezer!
I found that a regular blender couldn’t keep up with the dough though. Time for me to get a food processor.
I’ll make these on the regular

  32. Judy says

Like this idea. 2 questions B4 I make these: 1) If I only have unsalted PB, how much salt would I add, & 2) Can I sub an equal amount of cacao bits? Thanks so much for all your time & energy in making life more beautiful! You are a lifesaver for people with special dietary needs. I found you only a short time ago & I have made 6-7 of your recipes but have yet to comment, though I have shared everything with family & friends who have grown to love you too! When I can breathe again (I suppose after Christmas) I promise to critique every recipe that I have made because they are soooo good! Your granola bars will forever be a staple in our home.

  33. Georgia says

Very yummy! I added 2 heaped tsp of Maca powder to the mixture and then rolled them in chopped cashews to finish. These will be great when on the go.

  34. Judi says

Made them this morning , I covered some in chocolate just to see what they would be like as a Christmas treat !! Very good

  35. Denise says

I’m becoming slightly obsessed with your recipes!! I have been in search of healthy and simple recipes. I definitely found what I was looking for. These are so good!! My husband asked if I would double the recipe next time. I think he is hooked too!!!

  36. Katie says

Love these! I substituted peanut butter with almond butter. I’m embarrassed to share that I ate them all in one day. But hey, I’m a breastfeeding mom! Good excuse, I think!

Thanks for the super quick, delicious recipe!~

  37. Shannon says

I made a batch with no chocolate and added shelled pumpkin seeds for my toddler, then another batch as written, then one where I used honey instead of peanut butter, and added dried cherries. They all taste amazing! Thanks so much!

  38. Emily says

I made these bites today- they are amazing! So easy, and will love the convenience popping a few in a bag to go in the mornings this week! Thanks for creating this great recipe!

Also- love your vegan eggplant queso!

And- trying to go full fledged vegan- your recipes are helping that process so much!

  39. Danni says

Hellooooo! I’m a complete cooking noob, can I replace the dairy free dark chocolate with just normal dark chocolate? Is regular dark chocolate a lot sweeter? I only ask because I live in a small town and no where has dairy free dark chocolate :c

  40. Adrienne says

I have made this recipe twice now and these peanut butter cup energy bites disappear very quickly in my house. The first time I followed the recipe and tried to make them in the blender (easier to clean), but I would not recommend it because my blender kept getting jammed up and not mixing all the ingredients together. The second time I made them in the food processor using almond butter instead of peanut butter and thinly sliced almonds instead of rolled oats and they were also very delicious! Thanks for the amazingness Dana :)

  41. Tara says

    Hello,

LOVE this recipe! So quick, simple and delicious:) I have made numerous variations so far (including tahini and then sunflower butter options for nut free school environment) and they always turn out well. Thank you for this recipe. It’s now a household staple!

  42. olivia says

Hello! did you use medjool dates for this? i like them so much more but all i have right now is deglet, do you think it would make a big difference? thanks xox

  43. Alycia says

My daughter loves these so much which is great because she has gotten super picky. Especially with breakfast foods. I use hemp seeds instead of Chia and I add cacao nibs. I freeze them and basically take them everywhere, haha.

  44. Trish says

Holy Moly!!!! Just made them and they are SO GOOD!!!! I felt so tempted I couldn’t help myself, in the end managed to put the half of the balls to the freezer. The rest is gone already! Thank you Dana! xox

  45. Andrea says

I made these yesterday to bring to a BBQ with some girlfriends & kids…everyone loved them, even my extremely picky 2 year old so THANK YOU!
I used hemp seeds instead of chia as I had none on hand – Delish!
I have shared this recipe with all at the BBQ as they all requested it :)

  46. Nora says

Thank you for this recipe. So often vegan sweets that call for dates just make the whole thing taste like one big date that I could have eaten without all the cooking. These taste great and are as much fun to make as they are to eat. I Have cooked a little too much with rolled oats so I substituted unsweetened coconut flour and they are great. I rolled some teeny tiny balls for my toddler daughter – the size of peas that she can pick up and pinch.

Thanks again. You are a great cook with wonderful ideas that you make manageable and fun for home cooks like me.

  47. Amy says

I don’t have any chia, flax or hemp seeds and have never baked with any of those ingredients so have no idea what they could be substituted with. Would sesame seeds work? Or ground almonds? The internet suggests chia seeds sometimes replace eggs in recipes – should I use a egg instead??

  48. Scott Robert says

These are awesome! the first time i made them, i had a lot of trouble with everything sticking to my blender, so when i mae them again i blended the dry ingredients first, put them in a bowl, then blended the dates, and added them to the dry ingredients, followed by the peanut butter. it was much easier to mix, and it didnt make a huge mess!

  49. Ron says

Simply put its just scrumptious & heavenly, just 9 made it to the fridge…as the rest were devoured in the process!! Can’t imagine minimalist ingredients n prep can taste so good. A hit with kids!!! Great work Dana..

  50. Elena Shetty says

This is perfect snack for long and boring study nights but not being guilty thank to chia and oat. You just save my life Dana. Love you!

  51. Sue Ann Jaffarian says

I just whipped these up. They were fast, easy and OH SO YUMMY! I’m freezing them and taking them to the office for my afternoon snack.

  52. Jessica says

Tried these today. Sooooo good! So far I’ve tried three recipes from your site (chilaquiles & tofu stir fry) and all three have been delicious. Dana, you rock!

  53. Lisa Marie says

Yummy! Will definitely make again. Love the simple ingredients… already had in my kitchen.
I have a nutri bullet which isn’t the best for this recipe… I suggest soaking the dates and blending. And then just mixing in the rest of the ingredients with your hands. I was able to blend the dates, but my blender wouldn’t combine everything else.

  54. Amy says

My blender didn’t like this recipe. Had to resort to knife and cutting board. Suggestions where to find new blender? All the writeups I see seem concerned with ice chopping.

  55. Gracious Store says

I just like the sizes of these energy bars/nuts, just thrust them into your mouth and “mage”

  56. Melissa says

These are FAN-friggin’-TAStic!! So easy and so good. Rolled ours in coconut. Hubby loves them too. I’ve made them twice since you posted these the other day. Thanks for the great recipe!

  57. Jess says

These look so yummy! I’m on the hunt for no-bake recipes right now, since using the oven is going to become difficult as we head in to spring and summer. Thanks for this – I can’t wait to try them!

  58. Kristi says

So good! I love these – sweet, but filling and satisfying! I used Justin’s organic hazelnut butter instead of dark chocolate because that’s what I had on hand and they are wonderful!

  59. Elizabeth at Pineapples and Polka Dots says

These look delicious! I am always looking for new, portable, and nutritious snacks to bring to work, which I can make ahead on the weekends. I can’t wait to try these. Thanks for sharing the recipe!

  60. Ann says

Great recipe! Is there a substitute that can be used for rolled oats? Some gluten sensitive people can’t have oats as well. Thanks!

    • Alicia says

There are gluten free oats. Bobs red mill makes them. I first found at a natural foods type store but they have recently shown up in Target and my local grocery store. If they say “Gluten free” on the front then they are certified and safe for Celiac patients and similar Gluten intolerant people.
      Enjoy!

  61. Jen says

These look great, BUT! I am allergic to oatmeal and have had trouble finding an alternative in recipes like this. Do you have any suggestions?

  62. Katrina @ Warm Vanilla Sugar says

Definitely the perfect kind of snack! These sound like the greatest treat for the middle of the day.

  63. Sandra Lea says

Related to the comment above, approximately how many dates are in one cup? I always seem to have a problem with this, I either use too many or too few. Are they packed in the cup or loose?

    • Melissa says

I’m never sure of this either. I used my kitchen scale and measured out 220g as per the recipe. It seemed like more than a cup, but they turned out great. Guess I should count them next time :)

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

In my experience, about 20. But this absolutely depends on the size of your dates. If you can weigh them, 1 cup is about 200 g. Good luck!

  64. Marcia says

YUM! Just checked and I’ve got everything needed to craft these babies – you just made my husband VERY happy; as soon as he gets home from work!

One question about the dates. I normally keep mejool dates on hand, but this time I’ve got deglet noor dates. Deglet noor are about 1/2 the size of the mejool variety so do I use 2 cups of deglet noor or just one? Oh, I almost forgot. I bet rolling them in granola or chocolate nibs would be yummy too!

    Thank you,
    Marcia

    • Marcia says

Update from yesterday. Made them yesterday afternoon. Decided to use 1.5 cups of Deglet Noor dates. They probably have used a few more. They didn’t look like your beauties! I had a hard time getting them to stick together. They look beautiful and my husband says they taste great so it was a success! I wrapped them individually in plastic wrap so they would be easy to grab on the run.

      Thanks so much!
      Marcia

    • Melissa says

If you have a kitchen scale perhaps you could measure out 220g (as per the recipe) then the kind of date wouldn’t matter. We rolled ours in coconut and they were delicious! Granola is a great idea too. :)

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Use 1 cup packed of either kind of date. And the recipe is pretty flexible, so if you have too many dates, add more oats to balance it out. And if you din’t add enough, just throw in a few more while blending!

  65. Ana @ Ana's Rocket Ship says

Well- my bag is full of snacks and after seeing this they may become even more full of snacks!

  66. Jennifer says

    Hi Dana,

These look great, and I think I will even put a few in the Easter baskets.

My son loves the candy with a coconut center and dark chocolate on the outside (Bounty style) . Is there any chance you could devise a recipe in time for the Easter Baskets? :) Thank you , Jennifer

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Hi Jennifer! I actually just made a recipe like this but it’s going in our cookbook (due out this fall)! But for this recipe I would recommend adding some shredded coconut or coconut butter to the recipe and blending per usual! Just scale back on the dates a little bit to compensate. Good luck and Happy Easter!

  67. Shawn @ I Wash You Dry says

I love coconut with these too! I love love love these kinds of snacks for the fam and I.

  68. S Lauren | Modern Granola says

I love hippie cookie dough! This looks amazing and is so easy! I love having energy bites like these waiting for me in the fridge for emergencies. Can’t wait to try these!!

  69. Elyse says

i love to roll mine in toasted coconut! They are dangerously addictive, if I see them I have to eat one (maybe all of them!)

  70. GiselleR @ Diary of an ExSloth says

Yum! Exams are coming up and I’m going to need to become that friend with all the mom things in my purse while studying haha. So thanks!

  71. Nargisse says

Thanks for this recipe!! So true, sometimes you just don’t have time to have real food! Can’t wait to try it!

  72. Meg @ The Housewife in Training Files says

These would be dangerous to have around. Not sure they would last more than a couple days!

    • Charlotte says

This may be impossible, but can you recommend any substitutions if you can’t have any nuts or coconut or seeds (or honey or agave)? (Luckily I only have mild issues with cashews so I have a fallback; it would just be amazing if there were a substitution because miraculously I can handle all the other ingredients…).

      • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

It should be okay to leave out the chia seeds without issue. We’d suggest cashew butter for the peanut/almond butter. Not sure of any other nut/seed free ideas!
