Easy, lightly sweetened frozen peach daiquiri that tastes like vacation in a glass! Boozy and non-alcoholic (virgin) options included. Just 5 minutes and 5 ingredients required!
To a high-speed blender, add all daiquiri ingredients (including the lesser amount of rum if you are using it) and blend on high for ~1 minute until smooth. Taste and adjust, adding more maple syrup to balance tartness or rum for a stronger drink.
Divide between your favorite cocktail glasses and garnish the rim with a slice of peach or pineapple, a lime wedge, or fresh mint leaves, or add a cocktail umbrella! Soak in the vacation vibes and enjoy!
Best when fresh. If there’s any leftover (we doubt it!), we suggest freezing in a popsicle mold.
Notes
*For best color and flavor, we highly recommend freezing fresh fruit at the peak of ripeness. Peaches should be fragrant and slightly soft to the touch. Pineapple should be flavorful and bright (not pale) yellow. To freeze, cut (unpeeled) peaches into 1/2-inch slices and pineapple into ~1 ½-inch chunks. Place fruit on a silicone- or parchment-lined plate or baking sheet in a single layer. Set in the freezer until fully frozen (~4-6 hours), then transfer to a sealed container until ready to use. In a pinch, store-bought frozen fruit will work, but we found the peach flavor was not as noticeable, the pineapple was more tart, and the color was more yellow. *Nutrition information is a rough estimate calculated with the lesser amount of maple syrup and without optional rum.
