Glasses of homemade Green Juice on a cutting board beside ingredients used to make it

If you love green juice but cringe at the price of store-bought, this homemade recipe + guide is for you. We’ve been juicing for years now, and in the process have perfected this tart-sweet green juice recipe.

Our go-to green juice is packed with easily-digestible nutrients and is ideal for using up leftover produce from the week. Rich in potassium, folate, vitamins K and C, and more, it’s the perfect drink when you’re seeking some potent nourishment.

Plus, it’s ready in just 25 minutes with 7 ingredients and a juicer. But fear not if you don’t have a juicer, because you don’t even need one to make it. Let’s do this!

Cucumber, parsley, lemon, ginger, apple, kale, and celery for making homemade Green Juice

How to Make Green Juice

  1. Our Green Juice Formula – We like to use moisture-rich celery and cucumber as a base, then add super greens like parsley and kale for pungent green color. Apple (or orange) adds a touch of sweetness, while ginger and lemon add tart flavor and an immune-boosting kick!
  2. Wash, peel, and chop – Our Hurom instructions recommend chopping vegetables into pieces small enough to fit easily down the chute. They also recommend peeling all citrus fruits as they can be difficult for the machine to process, which inhibits them from being fully juiced.
  3. Juice! Turn your machine on and run all ingredients through the juicer, using your tamper as needed. We recommend starting with celery, then cucumber, then herbs, then greens, and finishing with ginger, apple, and lemons. The apples and lemons seem to make a final pass through the juicer and push out any stubborn remnants that may have gotten lodged or stuck.

Juicing Tips

  • Before you get started, buy a high-quality juicer (see notes for recommendations) or use our Juice Without a Juicer Method. If buying a juicer, we recommend a slow masticating juicer (like this Hurom), which better preserves the nutrients.
  • Be sure to buy organic produce whenever possible. If you cannot find organic produce, be sure to wash thoroughly and peel the skin when possible.
  • Chop produce into small pieces that easily fit down your juicer chute. And don’t rush the juicing process by cramming too much produce down the chute at once, which can overwhelm the juicer and stress the motor / clog the machine.
  • Enjoy juice fresh or within 24 hours for best flavor / nutrient content (store leftovers well-sealed in the refrigerator).
  • Save the leftover pulp for use in things like crackers, breads, and cakes (results will vary depending on the type of pulp you have).

Freezer Friendly No
Does it keep? 24-48 Hours

Ingredients

  • 1/2 head celery, chopped
  • 1 organic cucumber, chopped
  • 1 handful organic parsley, chopped in half
  • 1/2 bundle organic kale, chopped in thirds
  • 1 3-inch piece ginger, chopped
  • 1 small organic green apple, stem removed, sliced
  • 1 medium lemon, peeled and sliced (reserve peel for 3-Ingredient Turmeric Tonic)

Instructions

  • Note: If you don’t have a juicer, reference this How to Make Juice without a Juicer post. Also see notes for juicer recommendations.
  • Rinse and dry your produce. Then prep for the juicer. Our Hurom instructions recommend chopping vegetables into pieces small enough to fit easily down the chute. They also recommend peeling all citrus fruits as they can be difficult for the machine to process, which inhibits them from being fully juiced.
  • Turn your machine on and run all ingredients through the juicer, using your tamper as needed. We recommend starting with celery, then cucumber, then herbs, then greens, and finishing with ginger, apple, and lemon. The apples and lemons seem to make a final pass through the juicer and push out any stubborn remnants that may have gotten lodged or stuck.
  • Enjoy immediately or transfer to a jar, seal well, and refrigerate up to 24 to 48 hours. Nutrients are most potent when consumed as soon after juicing as possible. Not freezer friendly.

Notes

*Nutrition information is a rough estimate calculated with the fiber reduced by half as some is removed in the juicing process.
*JUICER RECOMMENDATIONS: The two juicers we’ve used are: Hurom and the Jack LaLanne Power Juicer. If you’re short on time, the Jack LaLanne model makes juice a lot faster, but it’s not slow masticating, so it heats the produce to a higher temperature, which arguably decreases some of the vitamin and mineral content. However, it also largely fits in the dishwasher, so it’s quite convenient to clean. And while we love our Hurom for quality, it does take time to prep, juice, and clean. This Breville also seems to have great reviews and is relatively affordable (but we have not personally tried it).

I blended this in my NutriBullet Pro with added water and didn’t have to strain it. Used limes instead of lemons and added 1/2 tsp. matcha powder and a few frozen mango chunks.

I really wanted a creamy smoothie but didn’t need the calories for a snack, and this was surprisingly satisfying, refreshing, and delicious!

Hi D! If you want the juice to be more tart you can add more lemon! Hope this helps!

  2. Megan says

A great juice that is easy to make and tastes great. Made it in my Vita-mix and used a nylon bag for juicing. Quick and easy.

  3. Sara says

I made this with a golden delicious apple. I chopped everything in small pieces and put in my high power blender then strained it. Taste was great! I liked the kick from ginger! I’ll try with fresh squeezed orange juice next time, the apple just dosent get fully blended in my blender. Even with a metal strainer, the granules come through and the juice is not smooth. I’ve tried other recipes with apple they had same grainy result. So if you are blending, I recommend adding fresh orange juice in place of the apple for a smooth fresh juice.

  4. Christianne says

This Tasted AMAZING!! I just blended in my blendtec and strained. I first blended lemon juice, ginger, cucumber, and apple (peel on), then the other stuff.

Thanks for such an amazing recipe!!

  5. Chloe E says

Loved this juice! The cucumber, celery and lemon were super refreshing. I like my juice a little on the sweeter side, so next time I may add another apple.

  6. Lori says

EEE this recipe is so delicious!! I just got a juicer and this is the first recipe for me to try so far. So yummy. Thank you! :) The only thing, for other readers, is that a 1 three inch ginger is a lot of ginger. I loved it but it was too much for my boyfriend.

We’re so glad you enjoyed it, Lori! Ginger can definitely be more intense for some people than others.

    • Shelby Addison says

Hi! Do the measurements for ingredients in this recipe fit into the hurom 101 juicer container all at once and then come out and fit into their provided container without having to stop? Thank you!

  7. Kristen Wissmar says

I love the recipe. In the last when juicing I’ve always felt wasted with the leftover fibre. How do you make the crackers from leftover pulp?

    • Avatar for Dana @ Minimalist BakerSupport @ Minimalist Baker says

Hi Kristen, we haven’t tried making crackers, but offered it as a suggestion for those who want to experiment. Let us know if you try it!

Celery: probably the one thing I always have in my juice is celery. I use 5 to 6 celery stalks in this recipe. It s rich with vitamins and antioxidants, but to me, one super important benefit is that it provides some good digestive support.

    • Heather says

This was the first recipe I used for juicing. It’s delicious. I only used 1″ of ginger rather than 3″ and it was still a bit strong for me. I’d still highly recommend this recipe though.

Below I m sharing the recipe for my Balance Green Juice but before we head into that, here are a few of my at-home juicing tips! pecially if you want to juice at home to save money.  If this is the case, then choosing conventional produce over organic is easier on the wallet and just as good.

I have not made this because I was wondering about the taste
. Do you taste all the greens? I have issues with the greens.

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

If you’re concerned, I’d say scale back on greens and add in another apple. I find the taste to be quite pleasant.

It is largely just fiber. I compost ours, but you could watch the video for a few ideas on how to use pulp!
