This dream dessert truly is made with just 5 ingredients (I KNOW), starting with my Sea Salt Caramel Coconut Ice Cream as the base.

The good news is, any neutral-flavored vanilla or caramel-like vegan ice cream will do. I even think coffee or chocolate would be lovely here! Dream big, friends. Dream big.

Raw dates comprise the caramel (which is kind of magic because it doesn’t fully freeze in the freezer! I know.)

Salted peanuts come next because what would a Snickers be without the peanuts? So much salty crunch.

Lastly, a dark chocolate shell.

Super simple homemade Vegan Ice Cream Snickers Bars

5-Ingredient Vegan Ice Cream Snickers

Vegan ice cream Snickers made at home with just 5 ingredients! Naturally sweetened, so rich and creamy, and shockingly close to the real thing!

Ingredients

  • 1 batch Sea Salt Caramel Ice Cream*
  • 3/4 cup salted date caramel (3/4 cup equals ~16-20 dates, pitted)
  • 2/3 cup roasted salted peanuts
  • 12 ounces semisweet dairy-free chocolate (chopped)
  • 1 Tbsp coconut oil (optional)

Instructions

  • Slice firm ice cream into 10 (amount as original recipe is written // adjust if altering batch size) 1/2-inch slices (see photo) and set on a parchment-lined baking sheet to freeze again until firm – about 30 minutes.
  • In the meantime, prepare date caramel. Use above-linked recipe to make a larger batch, or place pitted dates (starting with ~16 as original recipe is written // adjust if altering batch size) in a food processor or high speed blender – if dried out, soak in warm water for 10 minutes and then drain beforehand.
  • Mix until a creamy paste is formed, adding warm water to encourage it along. Limit amount of water added or it can get too runny. You’re definitely going for a paste.
  • Remove frozen bars from freezer and spread on 1 Tbsp caramel and a small handful of peanuts. Set back in freezer.
  • Melt chocolate and coconut oil over a double boiler or in the microwave in 30 second increments. Set aside.
  • Remove bars from freezer once set and use a spoon to drizzle the tops generously with chocolate. Work quickly, then set back in the freezer to harden – about 30 minutes.
  • Transfer remaining chocolate to a shallow bowl or plate and reheat in microwave if it’s gotten too firm.
  • Once firm, remove bars from freezer once more and dip the bottoms in the remaining chocolate and brush away extra with the back of a spoon or spatula. Set back on parchment to freeze once more.
  • Serve directly from freezer as they become soft when they set out. Will keep in the freezer for up to a couple weeks, though best when fresh.

Notes

*For the ice cream, any neutral vegan ice cream will do. Just make sure it’s frozen into a loaf pan/square-shaped so it’s easy for slicing into bars!

    Have been wanting to make these bars for months. Finally did. Pretty Amazing. Although, I cheated a little and used peanut butter instead of the date caramel date paste (did put it in the ice cream). My only question is related to the ice cream. Can the coconut oil be eliminated or reduced? Coconut flavor was a little overwhelming. Will post and tag to Instagram.

      Hi Katy, The melted coconut oil in the ice cream creates a creamy texture! You could use olive oil in place of coconut oil, but we wouldn’t recommend omitting it entirely. Hope that helps!

    I just made this and served it to non-vegan friends. Rave reviews! I didn’t make any changes (well, didn’t use all the date paste on top). I made the ice cream and chilled one day, and froze in my ice cream maker and assembled the next day. Interestingly (and importantly) my husband, who has Type 2 diabetes and is on a monitor, found that these were a great treat for him. They didn’t adversely affect his blood sugar at all! (Same with the non-cook peanut butter cookies I made last week. Amazing!) I love this site and every recipe I’ve tried has been a hit! Thank you!!!

    My grand-daughter asked me to make an ice cream cake for her birthday… I made these, She loved them!
    This recipe takes days to make if you are making the ice cream too, which I did, and followed the sea salt caramel ice cream recipe (link included in recipe).
    I just did a little each evening when I got home from work, starting with the ice cream recipe then moving onto the snickers recipe. Began on Monday and by Friday they were ready for party! Some steps for ice cream call for overnight actions… so this approach worked well and I never felt overwhelmed!

    Girl, I knew these were coming but let me tell you: I was NOT prepared. When I was little, my mom would take me to the pool (yeah, by myself, I was an only child, okay? Not at TOTAL loser) and since she hated going in the water, she’d sit by the side and read magazines. At some point she and I would have a telepathic connection, and she would pull her wallet out as I scampered towards her to grab a dollar and go to the ‘food-allowed’ section of the pool and nom down on an ice cream Snickers. Let me tell you, it was heaven. I would always eat all the ice cream around the caramel and savor the center. (Now that I can make my own, I may just make them 90% caramel!) Great recipe :)
