Jar of Peanut Butter Overnight Oats for a delicious vegan breakfast

When your busy, seriously amazing sister who’s chasing around two beautiful kids (4 and 2 years old) all day asks if you could make her an overnight oats recipe to make morning mealtime easier, for goodness sake, you make the woman some overnight oats.

This version is as simple as it gets: 5 ingredients5 minutes prep time, no fancy methods, and simple ingredients. Let’s do this!

What Are Overnight Oats?

Overnight oats are a quick and easy breakfast or snack made by soaking rolled oats in liquid overnight.

We love how overnight oats seem to keep the integrity of the oat intact, helping to avoid that gummy texture that cooked versions sometimes take on.

They’re simple to prepare (no cooking required!) and perfect for when you need a make-ahead breakfast or snack, especially for those with hectic mornings.

Keep reading to learn our perfect formula for overnight oats!

Chia seeds, oats, almond milk, peanut butter, and maple syrup for making our delicious vegan overnight oats recipe

How to Make Overnight Oats

After a little testing, I’m happy to report that our simple, straight-forward method truly yields the best results! I even tried partially cooking the oats with warm almond milk before refrigerating, but much preferred this completely raw version.

We use the following base formula for making perfect overnight oats:

1/2 cup Dairy-Free Milk + 3/4 Tbsp Chia Seeds + 1/2 cup Rolled Oats = Perfect Overnight Oats

You can play with formula as needed, adding more dairy-free milk for wetter oats, or adding more chia seeds (or oats) for thicker, more pudding like oats.

To make your overnight oats, simply add these ingredients to a small jar or bowl with your preferred sweetener (we love maple syrup or stevia!). We also added peanut butter to this version for a flavor and protein boost!

Give the mixture a few stirs to make sure the oats have been fully immersed in the milk. Then, cover and leave in the refrigerator overnight to let the oats soften and flavors meld.

Overnight oats FAQs

How long do overnight oats last?
Overnight oats can be prepared up to 2-3 days in advance, sometimes longer.

Can you eat overnight oats hot?
Overnight oats can be eaten hot or cold. To heat, microwave for ~45-60 seconds (just ensure there’s enough space at the top of your jar to prevent overflowing), or transfer to a saucepan and heat over medium heat until warmed through.

Can you use quick oats?
We prefer using rolled oats to make overnight oats, but you can use quick oats – they will just be softer.

Can you use steel cut oats?
Though we haven’t tried it, some people report success using steel cut oats to make overnight oats. They will take longer, require more liquid, and probably won’t be quite as soft. They may also be more difficult to digest.

Are oats gluten-free?
This is somewhat controversial as some believe even certified gluten-free oats to be troublesome for those with gluten sensitivities and celiac disease. But based on our own research and experience, it seems certified gluten-free oats make this recipe gluten-free.

Cuisine Gluten-Free, Vegan
Freezer Friendly No
Does it keep? 2-3 Days

Ingredients

OATS

  • 1/2 cup unsweetened plain almond milk (or sub other dairy-free milks, such as coconut, soy, or hemp!)
  • 3/4 Tbsp chia seeds
  • 2 Tbsp natural salted peanut butter or almond butter (creamy or crunchy // or sub other nut or seed butter)
  • 1 Tbsp maple syrup (or sub coconut sugar, organic brown sugar, or stevia to taste)
  • 1/2 cup gluten-free rolled oats (rolled oats are best, vs. steel cut or quick cooking)

TOPPINGS optional

  • Sliced banana, strawberries, or raspberries
  • Flaxseed meal or additional chia seeds
  • Granola

Instructions

  • To a mason jar or small bowl with a lid, add almond milk, chia seeds, peanut butter, and maple syrup (or other sweetener) and stir with a spoon to combine. The peanut butter doesn’t need to be completely mixed with the almond milk (doing so leaves swirls of peanut butter to enjoy the next day).
  • Add oats and stir a few more times. Then press down with a spoon to ensure all oats have been moistened and are immersed in almond milk.
  • Cover securely with a lid or seal and set in the refrigerator overnight (or for at least 6 hours) to set/soak.
  • The next day, open and enjoy as is or garnish with desired toppings (see options above). See more flavor/topping suggestions in the blog post above!
OPTIONAL: You can also heat your oats in the microwave for 45-60 seconds (just ensure there’s enough room at the top of your jar to allow for expansion and prevent overflow), or transfer oats to a saucepan and heat over medium heat until warmed through. Add more liquid as needed if oats get too thick/dry.
  • Overnight oats will keep in the refrigerator for 2-3 days, though best within the first 12-24 hours in our experience. Not freezer friendly.

Making this right now! I have a feeling that I will be smiling wide during tomorrow’s breakfast! Nice change from the Bircher Muesli I usually make. Thanks!

  2. Latisha_G says

This was absolutely delicious! My 5 year old loves oatmeal. I wanted a better alternative than the instant oatmeal I had been preparing. He loves Chia seeds as well. He calls them his “Super Hero Cheetah” seeds. I topped the oatmeal off with some homemade granola. I purchased some cacao nibs today to use with the granola for tomorrow’s breakfast.

I just wanted to let you know that your recipes are FANTASTIC AND DELICIOUS!

  3. jatin says

Great recipe. One question – can I make a smoothie of this thing after soaking overnight? It would be awesome having a on-the-go breakfast.

  4. Sam says

Silly question but do I need to cook the oats first or is that the point of allowing them the 6 hours in the fridge?

  5. Daisy says

Hey :) amazing recipe! I was wondering if I made these in batches for the week, would I be able to freeze them? :)

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

You could make them in advance, but I don’t think they would freeze well. But if you try it, let me know how it goes!

  6. Cindy says

I love this recipe and make it all the time! I personally like it even better when the sugar is swapped for mashed ripe banana. PB + banana oats for the win! Sometimes I even add some cocoa powder to make chocolate peanut butter ‘pudding’ for breakfast. It’s delicious :)

  7. Andrea says

Wow, this is amazing! Thank you so much for this recipe…it tastes delish and helps me get a healthy breakfast in while getting my two littles ready for school.
Have made this 4 times now….SO GOOD!

  8. Dan says

Oh my days was this delicious! Couldn’t find chia seeds, but I was so excited to wake up knowing that this was in the fridge, and it didn’t disappoint!

  9. Arlene says

This was the perfect breakfast! it was filling and delicious. I love that I can make it a couple of jars ahead of time and have it ready for busy morning. It held me until lunch which is a feat all of it’s own. Usually I eat a mid morning snack…didn’t need it.

  10. Michelle Ouyang says

Had these this morning and they were amazing! My 16 year old daughter liked them as well. I am definitely adding them to our breakfast rotation. Thank you for an awesome recipe!

  11. dave says

Quite the revelation! I take the train and love that this breakfast is simple to pack and completely ready when I arrive. As an alternative to the maple syrup, I like starting an overnight thaw of frozen green figs and berries. I chop the figs and add in the morning. Thank you!

  12. Ashley says

Just tried overnight oats for the first time this morning!! SO GOOD! I have begun my pumpkin kick for the season, some may say it’s too early for pumpkins, but who cares! :) I just moved to AZ from VA and I already miss the beautiful fall colors and pumpkin festivals from back east. Anyways…I substituted Pumpkin Butter for the peanut butter and added pecans – the result = autumn in a jar!

I also just recently discovered your blog and LOVE it! Will be making more of your recipes soon!

    Hi Dana,

Thanks for the recipe. I am constantly working so need a quick breakfast fix. Just one question – i don’t have to cook the oats before putting them in?

It is 3:20 a.m. and I just discovered your Minimalist Baker blog. I just started chemotherapy for breast cancer and am having a really rough time. I have realized two things, the thought of meat turns my stomach and I need plenty of protein, fiber and easy to digest healthy food. What to do; chia seeds, legumes and nut butters! Your Overnight Chia Seed Pudding recipe looks amazing, as does your Peanut Butter Overnight Oats. I plan to try both these recipes. I have barely begun to scratch the surface of your blog, but had to take the time to send this email before looking over more recipes.

Ann, I am so glad you’ve found a little solace here. I hope you LOVE the recipes, especially this one. It’s been one of my favorite oat recipes to date. I’ve had several relatives endure cancer, one with breast cancer, so I sympathize with what you must be feeling. A little food always brings comfort. Take heart and we’re sending you hugs! xo, Dana

Hi there, I used fresh cows milk from the mor ings milking and it was great! Dana said use any milk you can get your hands on!

  15. Brooke of Passport Couture says

This sounds like a great recipe that’s simple but tasty! I can’t wait to try it out. Love that it’s vegan.

  16. Maria karmina says

I wasn’t sure what to do about the almond milk and the chia seeds because we can’t get those things here on the ranch in the small town in Mexico that I live in. So, I wrote to Dana and she said use any milk you can get your hands on and just omit the chia seeds or use flax seeds instead. So, I used fresh cows milk from the mornings milking and just omitted the chia seeds, and this was ABSOLUTELY FANTASTIC! I had tried overnight oats once before about 15 years ago and it was nothing but sugar and milk and oats and very thin and just disgusting. This was nothing like that was. This was thick, and rich and creamy and full of flavor and the peanut butter was the perfect addition to the whole thing! I made 2 double serving glasses and my husband and I were both scraping our glasses down to the last drop of oats and creamy peanut butter! We will definately have this at least once a week or more at our house! Can’t wait to try it again and with other fruit combos, like chopped apples, mangos, papayas orr chopped dates and maybe add some chopped walnuts or pecans…the combinations could be endless!! Thanks so much Dana, we needed a deliciously satisfying and simple breakfast that was cold, to lighten up our wake up to the hot hot Mexican sun mornings.

  17. Lisa says

Hi! I was so excited to try it last night and then realized I was totally out of oats! I ended up making it with chia seeds instead and it still turned out pretty tasty! Thanks!

  18. Megan Hansen says

I usually hate overnight oats! This is the BEST version i’ve found. Seriously so good. I’ve had it for breakfast the past 4 days.

I’m really liking it with cinnamon.

    Thanks!

  19. Pineapple_jojo says

Fantastic recipe! I subbed out PB for almond butter and added some frozen raspberries, so delicious! Thank you!

  20. Nicole says

I am a new mom and can’t tell you how actually helpful and wonderful this recipe is. I now make 2 jars every 2 nights and it has made a big difference. Eating something that can sustain me for a few hours at least has become so important. I’m not sure if this is unrealistic but I’d love to hear if you have ideas for lunches or suppers that also can be made the night before in mason jars! In my dream life, this includes avocados and cheese… but I am curious and hopeful about any ideas you have!

  21. Gabby says

Greetings from Paris! I’m putting this on the breakfast menu for my four kids starting September. Two which are vegan, two which are not. I love finding recipes that bluff them. “This is vegan?!” – YES! Simply delicious!

  22. Lucy says

Made this last night and today I tried it and they are SO good! Also I’ve never had overnight oats before just regular cooked version and I’m so glad this was my first try. Going to be making these often. Really great too because I have two little boys same age as your Sis and they keep me busy. Thank you for the tasty recipe!

  23. Ariela says

This recipe sounds great and I’ll definitely have to try it out soon. I have one question though – do the calories in nutrition information include the toppings (such as a banana)?

  24. Maria says

Hi there, I live in mexico in a tiny village about 4 hours from a city large enough to find almond milk. And chia seeds? Not happening…what t can I use for substitutes?

  25. Robin says

This recipe is SO excellent. I’m horrible about all things breakfast – making it, eating it, planning for it… ugh. This is so easy to put together, and the results are amaaaazing. The best part is that all you have to do is pull it out of the fridge in the morning. Thank you Dana!

  26. Sara says

I’m new to overnight oats but with three kids and a job I NEED to try them. This recipe looks amazing and I can’t wait to try it! I have two questions: can I substitute honey for maple syrup and what size mason jar do I use?

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

Yes you can sub honey, and the mason jars I use are actually ones I’ve recycled from the store. But the smaller the better!

  27. Molly says

I don’t have time to comment on all your recipes that I love but I have never had overnight oats before today. Oh my gosh. This was delish!!!! You nailed it once again. This is why your recipes are a breakfast, lunch and dinner staple at our house. THANKYOU.

I’d love to try this! I live in Italy and there aren’t many options for peanut butter here (I only see the crappy Skippy), but there’s a shop selling organic peanuts so I wanted to try and make my own butter. Meanwhile, I’m pinning this! :D

Came across your website recently when looking for a Chia pudding recipe made yours and loved it. Now making these overnight oats for breakfast tomorrow and judging by the small teaspoon I just sampled it’s going to be fabulous. Two for two. Thanks for your easy yet tasty recipes, I’ll be trying lots more in the coming weeks.

I love overnight oats and I often top them with peanut or almond butter, but I love the idea of mixing it right in the night before instead so the oats can soak up all that flavor. Will definitely be trying this!

Thanks for this recipe, it was delicious! My older daughter just started classes and she has to leave before 7am ? so this is just perfect. I used half sunflower seed and half almond butter, it was really goood!!

I love all your recipes, and make the peanut butter cup balls almost every week for breakfast. Just curious, can I sub soy milk in instead of almond milk? I have a huge thing of soy I bought yesterday & would love to make this tonight!

    Thanks!

I’m with you Dana – I rarely do overnight oats but for a while there I was doing them all the time. How lovely to have a sister! I’m an only child and after lots of pregnancy issues, it looks like mine will be an only too. This recipe reminds me of one I did while I was camping over the July 4th holiday. Instead of soaking the rolled oats I added chia, almond butter and almond milk in the morning right into the rolled oats and made a cereal. It was delicious! Thanks for reminding me of that recipe. I might just have to make it again and post it!

  36. Sophie | The Green Life says

Sisters are the best. And overnight oats are just so awesome too! :)
I haven’t made them in a while, but now you’re just making me want to get back to it asap! These look gorgeous!

  37. Donna says

That looks fabulous. Dr. BN Reddy told me that he fixed oats every night for breakfast. I thought it sounded horrible–I’m not sure what he added to his, but this definitely looks like something I’d like. Seriously, peanut butter and oats, how can you go wrong. Thanks for the recipe my beautiful niece.

  38. Jess says

So glad the rest of us out here can benefit from your good sister-ness! Somehow I totally missed the boat on the overnight oats trend, but I think you should bring it back strong – these look so amazing. (P.S. Just returned to KC and was thinking of you former KC dwellers – bummed we missed you!)

  39. Rebeca says

I LOVE overnight oats! Mainly because I get up and breakfast is ready, which is a huge bonus in my book. I don’t know why I’ve never had them with nut butter though – must change that! I’m not a fan of peanut butter, but I made cashew butter with cinnamon and vanilla and I think it’ll work great. Breakfast tomorrow.

  40. Stasja says

How did I not know about your blog? Everything just looks incredible! And especially this, cause I’m in love with peanut butter.

  41. Joanna says

Confession. Yes, that’s true. Only the other day I tried chia seeds. They’ve been everywhere. Everytime I opened my computer- they were there. Magazines- there. Shop- there. That’s why I did not want to try them…because I thought they were just another super healthy, soon to be forgotten things. And then..one day..i bought some chia seeds…and that’s it. I’m lost! they are great! At the moment I’m just trying all the recipes out so this one is added to my vast collection of chia craziness! Ciao! :)

  42. Lucero Ramirez says

Thank you! I was just finishing mixing the milk with the peanut butter when I realized I didn’t have any oats left! So I added amaranth insted. This morning the result was amazing! So good. I’ll try it again with the oats though.

  44. Olivia says

Literally just finished making this and then sat down to scroll through new blog posts and saw this. I made mine in a nearly empty peanut butter jar (which means not a drop of peanut butter will be wasted) and added almond extract.

  45. Gluten Free Babe says

The pictures are incredible. I have been making my own almond butter – so I think I will use this to replace the PB. thank you Dana!

  46. Charlie says

I keep hearing about these chia seeds and overnight oats – I feel like I might be missing out. The thing is, I don’t mind making oatmeal in the morning, I even kind of like it! Are overnight oats the same creamy texture as regular oatmeal just cold? I’m tempted to just go for it to see what this jar of oats is all about…

P.S. I made your 1-bowl Nutella banana bread but with gluten and dairy since it isn’t a problem for me, just posted on my blog and I LOVE the recipe, thanks for the inspiration!

YUM X 10! I used to make overnight oats all of the time when I had dairy in my diet. This looks fantastic and I will be making this week. I usually put slices of 1/2 banana in there as well and will try almond butter! Thanks for the great idea!

And I have two younger brothers… neither of whom would eat oatmeal in a billion, trillion years. ;)

    • Cheri says

Dana- oopsy!!! I was making my own concoction & ran across your recipe trying to figure out the almond milk to oats ratio but used steel cut oats will it work???

      • Pam says

Hello! I tried steel cut since that’s what I had on hand (and they are healthier), but it definitely kept the integrity of the oat. I read that the rolled oats did too, but the steel cut didn’t really soften, and since they are smaller, I think there was more “oats”, so I’d try a little more milk. Mine was still delicious with the same ratio. I topped with a banana to make it a little softer. :)

        • Julie Soulliere says

Wanted to try this recipe with steel cut oats – I think they taste so much better and def healthier. Glad to hear that they will work!!

  58. Tania says

How long will these stay fresh? I’m double lazy (don’t like mornings and don’t like night-before prep work) so can I make a lot and have it throughout the week?

    • Avatar for Dana @ Minimalist BakerDana @ Minimalist Baker says

I think they’d keep for up to three days, then the texture and flavor would start to diminish. Hope that helps!

    • Cassy says

Actually, I suggest prepping all your mason jars for the week with differing variations. make the first 2 with liquids and leave the others sitting out without liquids as a reminder to add liquids the night before. then you can always just add hot water instead if you realize you forgot the night before or add liquids and eat for dinner.

option 2: put nuts and dried fruits on bottom, add liquid, and put oats on top for all week mason jars. turn over the jar you want to each the next day each night. will Not be too soggy then. best to use hard or containers that are taller and thinner for this option.

      best oats wishes!

Oh my goodness. Yes. This is my life right now. Except that every morning I find I’m craving an epic bowl of overnight oats only to realize that I never prepared them the night before. As someone who doesn’t naturally like the consistency of oatmeal, do you have any suggestions for making this a bit crunchier? I made this recipe last night and the taste is fantastic. Could I perhaps cut down the almond milk? Or maybe I just need to add granola?

You could add granola but that would make your calorie count spike up. Instead of soaking it overnight, you could prepare it and eat it right away. It would have more of a cereal consistency rather than mush

Danielle, I made this recipe Using organic steel cut oats instead, because that is what I had on hand. It was crunchy, kind of reminded me of grape nuts cereal!

If you do not mind it being hot I warm mine up for a minute or two and it creates a crust like top

Try using steel cut oats! They will soften up after Day 1 but I love the texture they provide. Also you can try adding crunchy peanut butter in place of almond or regular creamy peanut butter. Delicious!
